I thought that the service was absolutely impeccable... I've never seen such meticulous, detail-oriented service at a restaurant in my life. Each plate and cocktail was a real piece of art as well, not just because it looked good but because of how creative they were with ingredients, technique and preparation. Despite these qualities that are certainly characteristic of a two Michelin star place like this, I left fairly disappointed because the food itself didn't taste that great. Usually places like this you're going to have dishes you don't like, some that are okay, and some you'll remember for a lifetime. But none of the plates here were memorable and a lot of them actually were incredibly salty. Plus the cost of the meal was around $800 after initial deposit + bill, and it's not a great feeling walking out after paying that much and feeling like it wasn't worth it. If I were to pick a couple of dishes I enjoyed the most it would be the pickled clams with caviar, leek and potato, and the pibil pork tamal with young corn cream. The cream on the tamal tasted like crema but was made out of something ("young corn"?) that crema is not usually made out of, which was impressive. The pickled clams were very unique, quite an enjoyable way to have clams. The most beautifully presented dish of the night was the lettuces from Tepotzotlán which was consumed by carefully dipping each piece of leaf in a sauce with a bunch of things I've never heard of ("sikil pak, Cuadro cheese and celeriac bushi"?). Despite the presentation and creativity, the taste was mostly just nutty and salty and it got pretty redundant eating it. We noticed a table next to us that just decided to not finish it. I was leaning towards more of a three star rating here just because of the unimpressive flavors paired with the steep price resulting in a poor value meal. But the quality and professionalism of the service and overall operation was truly impressive and earns them an extra star. The interior of the restaurant/ambience wasn't particularly impressive either, but every detail of the restaurant from the service to the table cloths to the bathrooms was carefully considered. Overall though if you're looking to be blown away by the taste of the food and just have a really solid, Mexico City-style meal, I wouldn't recommend this place for that. I am not sure who I would recommend this place to honestly.

They also had a good food selection, but we had just eaten. However, we saw on the specials that they had escamoles (ant larvae), so we indulged in that. Not bad, actually. Also, go to the bathroom. It's trippy AF. Not sure how the women's one is, but the men's one has a low sloped ceiling with a mirror so you can watch yourself pee. Glad I was still reasonably sober when I stepped in there.

But Pedro warmly greeted us in English and helped us decide how to start our mezcal journey in the DF. Their inventory of mezcal is mostly made of their own brand (Alipus), but they have several others as well. We decided to go with a flight (5 mezcals of your choosing for 180 pesos) of the ones made from the same kind of agave but with different flavor profiles. There was an earthquake alarm that interrupted Pedro in the middle of pouring our flight, but he picked right back up after we returned to the bar. He recommended tasting them in the order he poured them from left to right as the flavors went from mildest to strongest. There's a water dispenser at the bar if you'd like to cleanse your palate between tastings. Or you can order an agua fresca of the day (30 pesos) to serve the same purpose. (We got to enjoy the watermelon with chia seeds, which was refreshing.) We enjoyed the middle three mezcals most, and we were wise enough to have just one flight between the two of us so we wouldn't need to take a siesta on the sidewalk. We will be back tomorrow for a flight of mezcals from five different states!

Each dish we had was not only beautifully presented like a work of art, but tasted phenomenal as well. Most places like this there's only a few standout dishes, but here every dish stood out. My favorite dishes (forgot the exact names) were the abalone, desebrada de res served cold, and the lengua entree. These three were not only the best dishes I had here, but are on the list of the best I ate all time. The abalone specifically stood out. It was served cold in this delicious light sauce and I completely wiped that plate clean. The lengua was the best prepared lengua I've seen, so soft and melted in my mouth. I even made a couple of tacos with it and it was mind blowing. Another thing that stood out was this mole they served that was I think 10 years old. I have never heard of mole cooking that long, but when I tasted it, it was instantly obvious I was eating something special. Best mole I've had. The restaurant also has spectacular ambience, the inside is absolutely gorgeous. My only ding about this place is the cocktail program is a bit weak, wine is the way to go here. The service was good but nothing amazing. Those are just small details though. The most important part of any restaurant is the quality of the food and how good it tastes, and they exceed all expectations in that area. If you pick one fancy dinner during a trip to Mexico City, or want to celebrate a special occasion somewhere nice, this is unarguably the place to go.

I particularly enjoyed the appetizers/ first courses including the crab salad and the tartare which were beautifully presented. The mole was the star final dish with a comparison of the new and 4000 day old sauce, however I felt it was a bit lacking as a final main course with nothing substantial to eat it with other than the tortillas (which we had a lot of by this point already). The lemon cake dessert was my favorite. For a two star restaurant I felt both the food and service were a bit below my personal expectation. Several times we felt rushed as staff members took some people's plates away while members at our table were not finished. Everyone told me Pujol was not to be missed but maybe my expectations were too high. I found other spots in CDMX with a better overall culinary and dining experience.
