Of course…read morethe accessibility of a certain food/menu selection is convenient, but I also know that a food truck represents either a early step in a chef's progression or is an extension of their already established brick-and-mortar. Having seen a local (to me) example of a chef going from folding tables at a Saturday market to catering at various locations to having a food truck then a physical location, I have a understanding of what it represents. What I do NOT know is how they produce such delicious cuisines in such a confined space. Case in point, Wayne's. I was in the area visiting family and, per usual, had my finger on the pulse of local food options. This particular day I saw that Wayne's would be in the Lowe's parking lot, serving up lobster rolls and such. After seeing the menu and the photos I knew this was bound to be a memorable experience. Though this particular day found them out of lobster roll supplies, I count it a win as I was then in a situation where another order had to be made. My Southern roots resonated with the Southern fried catfish sandwich. Say all you want about catfish, but they are mighty tasty when cooked up right. Here at Wayne's, that is exactly what they do. A 4 oz. filet on a piece of lettuce and slice of tomato, with a lemon wedge and tartar sauce on the side, and some world famous Route 11 chips as a side. The wind was cutting through the air and jackets that day so we took our orders and headed back to the truck. Within minutes my styrofoam container was empty! Perfectly breaded, fried, and delivered. I cannot wait to make more and more visits in the future. And yes, that lobster roll is still calling my name.

No way... too good not to share. Here is the low down on some of the menu items we have tried. Mega taco and normal tacos: It's mega alright! It's so big that it hangs out the sides of the to-go container. Hubby was in hog heaven! I chose the normal sized tacos and just as tasty! The Angus beef is tender and seasoned well. The salsa and aioli... homemade and delicious. Spicy, but not overwhelming. The addition of ranch doritos added great texture/crunch and flavor. Definitely recommend and tacos are always on the menu! Chipotle Finger Lickin Chicken: So each week tends to feature a different finger lickin chicken variation. The chicken tenders are not pre-fab and frozen. No you are getting 4 thin chicken breasts here. Freshly breaded. And let me tell you the chipotle aioli... oh my word... it's sweet and a straight up party in my mouth. Not much heat but that is when the hot cheetos come in and add the perfect amount of heat and flavor. Only issue with the cheetos is they were either stale or they take on a very hard to chew texture once in a closed to-go container for 30 minutes. But I still found myself gnawing on one just because the flavor it added was worth it. Lol! Definitely at least 2 pounds of food. The container was so heavy and you could easily get 2 meals out of this entree if you can stop yourself. Pulled Pork Sandwich: I tried a bite of this and it was delicious! Great smoke flavor and bbq sauce was awesome. BBQ chips added great texture in and pickles... be still my heart and my ridiculous love of pickles. I almost wish I had ordered this for myself. Hopefully next time it finds it's way on the menu it shall me mine! Dusty Garlic Fries: I saved the best for last! Special seasoning that can be purchased to add to your spice collection. These fries are addictive and go great with everything. Can't wait to try the offering with the taco toppings on the fries. I can imagine they will be amazing. Chef Ender's menu changes weekly with the consistent offering of tacos and fries. There is a salad option and they sound wonderful, so we hope to try them soon. I've been here multiple times, and every single visit, I tell myself today is the day I try something new. Then the server walks up, and I instantly default right back to the Birria tacos. They are consistently incredible. The beef is perfectly tender, deeply savory, and packed with flavor, tucked into tortillas that have that ideal crisp edge from being dipped in the consume. Speaking of the consume--it is rich, seasoned flawlessly, and absolutely essential for dipping. It is a rare thing for a dish to be so good that it completely ruins the rest of a solid menu for you, but La Tortuga managed to do it. If you haven't been here yet, do yourself a favor and get the Birria. Just accept that you might never taste the rest of the menu either.
