This is the best of the best when it comes to a cooking class! I needed to hold a cooking activity for an internal offsite for our company. Not only did we have 40 people to feed, there were about 15 food allergies for the chef to work around. It was a tall order. But an order fit for Miette!!! We had 3 stations to work/cook in, we shifted every so often while others spoke and enjoyed wine (BYOB). Miette suggested the wine shipped a day earlier so they could chill the whites. (amazing) The food was amazing, and for those who had dietary restrictions, the chef was 5 steps ahead and already prepared and alternative! We had an amazing time, learned a lot, and requested recipes! it was an intimate space for 40, but we were able to cook, lounge, and drink very comfortably. As soon as we walked in, it smelled amazing! The size of the location was perfect because we were always engaged. (with cooking or each other) Sally was my point of contact - she was 100% professional, patient, great communicator, and worked with us and the chef seamlessly. I cannot brag enough on Miette. What also speaks volumes is when I was looking for a cooking class, ANOTHER class suggested that I look into Miette. (their space was not big enough). Had the most magical time at Miette Culinary Studio! I brought my 12-year-old niece, who absolutely loves to cook. When signing us up, I mentioned in a note that her dream is to become a chef. The class included seven or eight adults and us, and Chef Paul went out of his way to make her feel welcome. He took her under his wing, showing her basic techniques and treating her aspirations with such respect that she felt truly seen and encouraged. We arrived early, and Chef Paul shared that he began cooking in a professional kitchen around the same age as my niece, then apprenticed under a famous chef in Paris at 15. He later became the head chef of two restaurants before opening his own culinary studio. The class focused on French cooking and included a four-course meal. I loved that it was small and intimate--just 10 people--compared to other classes I found that had 16 to 20 participants. Although we worked in groups of four to prepare each dish, Chef Paul brought everyone together where he demonstrated key steps across all the courses--techniques that many cooks get wrong--and showed us how to do them for the best results. He even provided special recipes for us to take home and ensured that each student got hands-on experience with parts of multiple dishes. It truly felt like a shared and collaborative learning experience. By the end of the three-hour class, our class of nine or ten had shared a delicious meal and great conversation. My niece was absolutely thrilled and left even more inspired to pursue her dream. If you have a child who loves cooking, I can't recommend Chef Paul highly enough. Chef Paul was an excellent chef and instructor for our merry band of attendees. There were approx. 12 of us, and it was a very hands on class, not just observation. We prepared Caesar salad with the best freshly made dressing, gnocchi with a vodka sauce, and fresh made raspberry sorbet. My husband never thought he liked vodka sauce, he just hadn't had a good one until this class! We were able to take the recipes home with us to attempt at home with our new skills and knowledge. Went here for a private event that was held in the space. The entrance is unassuming and you get into the studio through a lift. The event was not an actual cooking class so I cannot comment on the classes itself but the space is large and spacious. There is a complete amount of utensils and all you need to host an event. I had been to one of Miette's classes some ten years ago when my mother was in town. I remembered it fondly enough that when my husband was open to doing a class (big win!), I thought this would be the perfect place. We opted for the Sunday French Country cooking class. Two people cancelled last minute and we were lucky enough to have the class with just 4 of us. Chef Paul was a true delight who took time and patience to explain his technique and skill. My friend treated me to this for my birthday a few years ago. Perfect, unique gift. We took the dim sum cooking class. Our instructor was adorable, outgoing and fun. The studio space was really cozy and quaint. It was a nice size group probably about 15 of us total. The presentation of the table was pleasing and, I walked away with the cucumber lemon water idea from this place. Learned how to make; egg rolls, dumplings, congee rice porridge (ick-wasn't a fan of this), chicken buns, potstickers all from scratch. It was hands on and everyone got to try making something. I had never done anything like this before and must say, it was a lot of fun! We each received a packet with recipes. Took a Knife Skills class with Chef Paul here and really enjoyed it! Chef Paul is very funny and patient he talks through everything in detail and keeps a great energy throughout. It's an intimate group, my class only had six people but I believe they have no more than 10. In the knife skills class we made three courses and each helped prep with everything so we all got hands on experience with every single step in the process. Then worked together to plate everything and sat down for a delicious meal! I took this course because I knew I wasn't the best with my knife skills (and tbh have had a couple injuries) but I came out so much more confident. It's definitely not for anyone with real training but if you have never been taught how to properly & safely hold a knife I would suggest taking this. And beyond the actual knife skills you're cooking a full meal so I learned a lot of other tricks and ideas throughout the class which have already proven helpful. I will 100% be returning for another class at some point soon, it's a beautiful kitchen and space as well as a fun way to spend an afternoon! read more

I booked a class for myself and my 8 year old daughter. It was absolutely perfect and really surpassed my expectations. My daughter is passionate about cooking so we've tried out a few of the kids cooking classes in the city, but they are geared towards children (of course), and always left her wanting a little bit more. I cannot think of enough positive things to say about our experience at Miette. We chose brunch as our meal, and learned to make eggs benedict, caesar salad dressing, roasted potatoes and lemon vodka sorbet. Chef Paul has his classes down to a science; he and Marie, who worked behind the scenes and made everything go seamlessly, have everything set up so that there is just enough time for him to explain steps, for the students to perform those steps, and for us to enjoy the meal without feeling rushed. The class was all couples, and he told us what we'd be making and asked us to decide amongst ourselves which couple would work on which aspect of the brunch. Everyone was so nice and supportive of each other -- and in the end, we watched everything, and tried a number of aspects of other parts of the brunch, so we all learned a lot. I can't believe it took me this long to learn how to poach an egg, and thanks to Chef Paul, I've got it down! Chef Paul has a huge amount of experience and should be snooty -- but he's not. He's charming, personable, interesting and a good teacher. Lots of folks can cook, but to be able to teach others to do so is a real skill. We definitely plan to go back to try other cuisines. My sister got me two spots for us at the Brunch cooking class for my Christmas present. We made poached eggs, roasted potatoes, Caesar salad, vodka lemon sorbet, hollandaise sauce and creamed spinach. Everything we made was delicious especially the hollandaise and spinach. You are split into groups to deal with each dish and are told beforehand the difficulty of each. Not everyone may get their first choice so speak up quickly if you want to do something. Everyone got to poach their own egg though, which is what I really wanted to learn. Although you're not hands on for every dish, you still feel like you learn how to do each one since Chef Paul demonstrates it to everyone. You get menus for the dishes you made too at the end. After starting our class at noon, we finally got to eating the food around 2pm. Would recommend if you're someone interested in cooking! read more

Sui Lon might be the nicest person I have ever met, cooking classes aside. We spent an amazing afternoon learning various methods of cooking fish and felt right at home no matter our level of expertise (or lack thereof). More importantly, my boyfriend has a long list of food allergens and right from the very beginning of the class, Sui Lon made it a point to have everything cooked for him separately so that he would feel as much a part of the class as anyone. The space is perfect for the 15 or so people we had in the class, the weather was great, we used the outside grill and really learned so much about cooking fish, not to mention various little hints Sui Lon threw out along the way. Everyone was extremely friendly and made for a very enjoyable dinner after we were all done. You would never think that such a cute and homey space would be located in between the cramped and loud bars of Macdougal street. Stepping through the doors and up the stairs, you enter a different world. I love to cook and be surrounded by food, but I'll be honest, I was a little intimidated when I first entered. I signed up for the Classic French cooking class and I wasn't really sure what to expect. The space upstairs is kind of small, but luckily, my cooking lesson had only 9 people. Hopefully you don't end up with such a big group. The class is very hands on, you will be expected to do the work. If there's a specific dish you want to do, make sure you voice it. All of the courses are divided into different group and stations, so you won't be able to work on every dish. But, Chef Paul goes over every instruction and recipe with you as a class. Chef Paul was a great instructor. Informative, helpful, and firm. I love the fact that he answered all of our questions, and told us all these little tricks. This was the stuff I was looking for - the small tips and details which meant the difference between a chef in the kitchen and a home cook. He keeps you organized and on track with the class agenda. I personally think if you are a mere beginner in cooking (as in...you don't know ANYTHING,) you might have a hard time keeping up with everything. I can say I learned a good amount, and it was a fun experience. I just wish our class had a longer time to eat. 20 minutes is too short for me, and I felt a bit rushed. But overall, all of the dishes came out great. My favorite dishes were the roast cornish hens (so juicy), the gruyere gougères, and the potato gratin. Miette Culinary's Paul Vandewoude is a very experienced chef who knows how to execute quickly & efficiently. His classes do not simply follow each recipe. Instead, he substitutes and embellishes, drawing on 20 years' experience in the original Le Zinc in Tribeca, and at the restaurants Tartine and Titou in the West Village. Our class included: Gougres (French Cheese Puffs), Salade des Moines, Poussin Valle d'Auge (Cornish Hens), Gratin Dauphinois (potatoes au gratin) & Souffle au Chocolate. We got the opportunity to learn and perform the insider process for cooking each one of these, albeit in a fast-paced way. Some great tips along the way, such as: the key to a great gougre is buying high-quality Gruyere cheese, and the way to tell if your cornish hen is done is to squeeze a bit of liquid out of the bird. If the liquid is clear, it's ready; if it's still a bit red or pink, it's not. And if there is no liquid, you're already screwed ... it's overcooked. Each class is broken up into teams, a chance to meet and work with new people, but this could also be a good team-building alternative to the ropes-and-relays playdays that are supposed to bond bands of employees together in corporate brother/sisterhood. The structure of the class is pleasant, conversational, but fast-paced, perhaps faster than it should be, both for solid comprehension of all you are doing while preparing all your dishes and for enjoying them in the true leisure of a typical French dinner. Our dinner had to be wolfed down in 20 minutes, mainly because we waited 30 minutes beyond the stated start time of the 3 hour class for late arrivals. And yet, we finished the class and the rapidly-chowed meal in less than 3 hours, meaning those of us who arrived on time were basically doing nothing for half an hour. I'm sorry, but 15 minutes would be my MAX for allowing late arrivals to be there at the start. Beyond that, it's on you for being late. Catch up as you can. read more

Came here for a cooking class with my co-workers and had a wonderful time! There were about 8 of us and we definitely got to actually cook everything instead of just watching. Chef Paul split everyone up so I ended up at the Souffle station. We also had two people making salad, three people making steak and chimichurri sauce and the roasted potatoes as well. We also sipped on wine and snacks while we were cooking. Afterwards you all sit down at the dinner table and eat your creations of course while Chef Paul and his assistant plate everything and serve you. I took a friend there for her b-day present and we had an awesome time. We chose the French menu which includes gourgeres, roasted cornish hen with a cavados sauce, the french equivalent of potato au gratin and chocolate souffle for dessert...yum...chocolate souffle. The chef was great at splitting us into groups to work on different dishes. We chose the gourgeres because my friend is obsessed with it. It was also supposed to be one of the more difficult dish to make. Our souffle won the evening's competition for being the tallest and most even. The only negative is I didn't think there was enough time to eat but I'm one of those people who can spend 45 minutes eating and go back for seconds when i really like the food. Also, I was supposed to get a subscription of Saveur which seems to be lost in the mail. It can be a bit pricey but well worth it! So if you want to try out your hidden culinary talents...I'd recommend Miette Studio. read more

I took the easier task at first.. but then decided that bc the chef was helping out with the people that took the harder tasks, that i would learn more. and i did! really fun class. low pressure. My wife and I recently spent a fun evening at Miette Culinary Studio in their At Home Italian Cooking class which we thoroughly enjoyed. We got the chance to learn how to make a kick ass bruschetta which was probably the best bruschetta we've ever had outside of Italy. We also made Polenta with mushrooms, stuffed tomatoes with rice and parmesan, roasted pork tenderloin stuffed with dried fruit, raspberry sorbet from scratch and also an easy to make spinach and ricotta gnocchi. Just FYI, the studio is a relatively small space but more than enough for the maximum 15 persons per class and you divide up the duties between the students. Three people might go and stuff tomatoes, two on the bruschetta. Note: You have plenty of time during preparation so please go around to the different stations and make sure you get hands on experience making some of the different dishes in class. At the end, everyone sits down together and you have dinner (and plenty of complimentary wine and beer) together. All in all it was a fun and informative class and I thought that it was a good value for what we paid. Chef Paul and Robbie (sorry if I'm getting her name wrong, we had a few bottles of wine when we ate!) were wonderful instructors. It was a very hands on class, and I took away some really useful basics for my own home-cooking. Like, how to properly chop potatoes for instance! Paul was very patient and explained why were were cooking the way we were, and how that influenced how the food turned out. I would definitely come back for something more advanced! The space itself is really cute and homey. It was like being in a friend's apartment (should that friend have turned their entire apartment into a kitchen). We had a great time. I went to Miette Studios with my sister while on a trip to NYC. Having not taken many cooking classes I have to say I did not have many expectations but I thought it was a great cooking class. Let me preface by saying that it was on a rainy weekday and so we lucked out; the class was my sister, one other women, and me. Needless to say, we had plenty on hands-on time. Chef Paul is wonderful! He is really passionate and wants you to learn. We learned how to make pasta from scratch and also made the most delicious chowder I've ever had. One of the best evenings ever. I was in New York for a long weekend with my 14 year old son. Both of us love to cook and found Miette luckily through an online search. We arrived at 4:45 for a 5-8 French cooking class and dinner. Paul, the owner, welcomed us and the other 11 guests to a small apartment set up as a professional kitchen and dining area. We divided up the tasks (Cornish hens, scalloped potatoes, salad, GOUGÈRES, and soufflé). I loved that everyone got to watch and participate in each of the courses. It was all hands on deck and timed perfectly. When we sat for dinner, Paul served wine and thoughtfully brought my son a bottle of ginger ale. The soufflés were a fabulous finish. Paul makes it great by calling BS on anything other than perfection yet maintaining a mistake-friendly learning environment. We will certainly be back. read more

My friends organized my bachelorette night out at Miette. It was perfect as I really love love love food. We were divided into 3 groups and each made a course: gougeres, crab cakes & raspberry souffle. The recipes are very friendly for cooks of all levels. We all walked away saying we would definitely replicate all the recipes at home. Chef Paul was great. He instructed us on what to do and really allowed us to get right in and cook. We really enjoyed his instruction! The studio is very cute and welcoming. The entrance is just next to Off the Wagon Bar and Grill on MacDougal. I got a gift certificate here and took an Indian cooking class. The studio itself is amazing - the chef, Paul, has done wonders with the place. He even told us he installed "floating" floors that do not touch the walls to that the sound from the bar downstairs don't interrupt class. And true to his word we didn't hear a peep from the crowded pub downstairs! Miette seems to attract a pretty varied crowd - my group was mostly 20 and 30 somethings, a few couples and some friends. The classes are 12 people which keep it nice and intimate and that size is perfectly suited to the space. The class I took was Southern Indian, which was unfortunately not hands on. I got the impression that most of the others are, but this one was demonstration. I think it may have been geared more towards beginners, but I still really enjoyed the very informative demonstration and I've taken a lot of cooking classes! We learned a lot about the spices in Indian cooking, and the instructor took the time to let everyone smell and touch every single ingredient so we would know what we were looking for when we went shopping. She even clued us in to the best local spice and Indian import markets so we could recreate everything ourselves. We made Shrimp Curry, Lime spiced rice, Coconut vegetable soup and Mango sorbet. Everything was amazing, and it was served with house wine, which was quite good. Overall I would definitely recommend this place for the social aspect because you get to meet a lot of cool people in an intimate atmosphere. It would also be great for couples and cooking novices. We took the Provencale cooking class with Paul on Sunday. The location is great - in the middle of MacDougal street. We were divided into teams to make different dishes. Paul explained how each dish is made in a great detail and gave us some very interesting tips about everyday cooking. When I told him I'm vegetarian, he said he will make an omelet for me and demonstrated how the omelet is made. It was very nice of him. All the meals came out very nicely!
