Went specifically for the chili crisp everything bagel and chili crisp scallion cream cheese, and was not disappointed. I'd order both again. They're both more "spiced" than actually spicy, I would add significantly more for my personal taste but the flavor absolutely comes through as they prepare it. Made the pilgrimage to new wave bagel and it didn't disappoint. Great sourdough flavor, SUPER CHEWY and great crunchy crust. Also super delicious cream cheese! Which if I recall is made in-house or produced local? I'll definitely be back when visiting San Diego County. Also the stamp of approval from my little guy! Stopped by New Wave Bagel in Encinitas to grab bagels for a few of my accounts in the area and had such a great experience. The staff was incredibly nice and went above and beyond once they realized the bagels were for multiple shops. They helped me split everything into separate boxes and even made sure each one had cream cheese and utensils for spreading. That level of thoughtfulness and customer service really stood out. The bagels themselves were fresh and really good, with a solid variety to choose from. Yes, it's a little on the pricier side, but honestly that's pretty standard for Encinitas. You can tell they care about what they're putting out. I'm especially excited to come back once they expand their kitchen. Sounds like hot sandwiches are coming soon, which will be a game changer. I love these sourdough bagels. We've been following New Wave since before they had a shop. They have creative bagel flavors that are really tasty. This past weekend we finally got to stop in their shop and picked up a half dozen. I really enjoyed the blueberry and brown butter salted honey. The sesame nori is also delicious. Finally got around to trying new wave bagel! They are only open 4 days a week which was part of the reason it took me so long. We didn't have a long line which was great (I've heard it can get pretty lengthy). They have a ton of interesting flavors to chose from. I went with a rosemary sea salt and a honey butter salt. They also have a wide variety of cream cheese flavors. One thing I didn't love was there is no toaster. Now, arguably a toaster isn't necessary for bagels when they come out fresh & warm, but these were not warm so that was a bit of a miss for me. Still enjoyed them nonetheless and would go back to try some other flavors. I didn't have the opportunity to try the coffee but my friends did and said it was great. We briefly met the roaster who was kind and friendly, much like the rest of the staff. read more

I've been visiting New Wave Bagel since they first opened months ago. I love the concept of sourdough bagels and enjoy the creative possibilities of seasonal flavors that they bring each month. Some of my favs were Cherry Cardamom and Jalapeño Cheddar. I really love their cream cheese; however, it seemed to spoil within 5 days of opening it. NWB has a great ordering process which you can order your 1/2 dozen or dozen favorite bagels, shmear- cream cheese, juices, etc. to be picked up. No need to stand in line to pick up the order. The walk up ordering is always available, this tends to have a good line but it's so worth it. The servers are always friendly, kind, and acknowledge your arrival. The shop is quaint and on the smaller side with a small open fridge for shmear, drinks, etc. read more

A small unassuming cafe off the side of the main road offers a variety of bagels and baked goods. I enjoyed the smear much more than the bagels but the bagels were good none the less. Do come early though because they sold out of a lot of flavors before noon. The pricing was also affordable and it's a nice place to grab an early morning bite if you're nearby. read more

Let me tell you about these 100% sourdough bagels from New Wave Bagels! Delicious! They sell savory and sweet combination and a variety of different smears to intensify your bagel taste buds! My first visit since their soft opening on 8/30/25. New Wave shares the space with Crossings Coffee Roasters where you can also order your caffeine fix! The wait line for the bagels can vary and when they are out, they are out! Arrive early to get a larger selection to choose from. Currently, they have about 8 bagel selections. I choose to try the Peach and Blackberry Bialy, Double Chocolate, Toasted Nori Sesame with the Chives Smear! I went home and made a Smoke Salmon and fried egg bagel. I came for the bagels, excited to have high quality bagels in North County. And while they did not disappoint, the cream cheeses wound up being the real star, and I say that as someone who does not usually care about cream cheese. We tried three bagels (chili crisp everything, rosemary garlic, and brown butter honey) and three cream cheeses (chili crisp scallion, jalapeño green goddess, and lemon meringue) and generally paired them in those orders. All were good, but the brown butter honey bagel was the surprise favorite, while the chili crisp scallion and lemon meringue were the favorite spreads. Highly recommend this shop. Excellent bagels, especially considering how few good bagels are available in the area. These have a good chew that makes them stand out from the more doughy bagels you find elsewhere. Most of the bagels I bought here were pre-sliced, but they were not sliced evenly through the middle, so some halves were thick and others thin. Please fix this or just don't slice them. Tried the jalapeno-chedder, sesame, and everything. All good, but the everything was mostly sesame seeds. Like that they don't use corn meal on the bottom because of allergies. read more

The texture of these bagels!! So fluffy and chewy at the same time. They don't have a toaster, so the bagels are room temperature, but they were delicious when ripped and dipped into their schmears. They have sourdough bagels and the texture was great, nice and firm on the outside but fluffy with a good chew in the middle. I came around 11 am on a Saturday and they only had a few flavors left, but they were both really good. My only wish is that the bagels came out hot or that there was an option to toast. Overall the line moved pretty fast and there was a quick turn around on the tables outside the shop. I would definitely recommend if you're looking for unique bagel/cream cheese flavors and are in the Encinitas area. This is a highly rated spot amid the San Diego bagel boom! Staff were extremely nice and seemed genuinely interested in what I ordered and ensuring they didn't sell out. The inside was spacious and I liked the outside tables. Holy Best Bagel in San Diego Batman! I got the bacon egg and cheese Biali and was blown away! The girls recommended the chilli crisp cream cheese to go with it and it will live in my memory forever. Good:The service was good. The location is nice. Needs improvement: My everything bagel was very hard, maybe it was old? They don't toast bagels which is absurd. Eating a hard bagel not toasted is not enjoyable. On top of that they don't even put cream cheese on, you get a container and a knife. The pricing is absurd. $4.5 for a small cup of coffee? I got two bagels and a coffee and I was over $15. Would I go back? Not unless they started toasting their bagels and making sure they are not hard as a rock. read more

I am super excited about this new spot! I accidentally arrived half an hour before they opened, but it was all good because a line was already forming so you may want to get there early! The service was very friendly and the bagels are good, very fresh, and have unique yummy flavors I have not seen before, although I may consider the bagels to be on the pricier side. I am excited to see if the menu will expand, such as if there will be bagel sandwiches offered in the future, and am also excited for them to get their full coffee menu up and running. Wish the staff had done what's normally done by bagel shops when one orders everything bagels -- i.e., bag everything bagels separately so they don't "flavor" the other bagels in the bag -- but this shop did not. We ordered the following bagels: cardamom and cherry bagel - bagel was good but tasted exclusively of cherry. No cardamom. If you want a cherry bagel, I recommend it. pretzel bagel - tasted nothing of pretzel. Don't recommend everything bagel - strange, semi-burned combination of sesame seeds, poppy seeds, garlic flakes, onion flakes, etc. It's the "etc" that gives the bagel an off flavor. These bagels are 10/10!! We went of the first week on their opening, at 7:50 am and we waited about 30 min. The staff was extremely friendly, and they had such a great selection of fun and delicious flavors! I love the unique smear flavors as well. My husband got the nori sesame seed bagel with chili crisp smear, and I got the roasted garlic fontina with chive smear. The bagels were that perfect chewy texture with a crisp crust. The smear was also a 10/10, it was a whipped texture. You can tell a lot of care and passion went into developing their menu and flavors. We arrived early and waited in a longish line to get our bagels. There are a few tables outside but not really enough seating to sit and joy. While everything was fresh the bagels themselves were just okay. They have the consistency of bread and not chewy like bagels. It was basically like eating good sourdough with a hole in the middle. The service was the best. They take the time to explain options etc. The bagels were great. Grew up on the east coast and these are not NY Bagels but they are delicious. Lots of different flavors and the three of us each got something different. Good choice of smears too. For those who can only eat toasted bagels you'll have to wait till their kitchen is done.
