    We were really looking forward to this place after reading the reviews, but it didn't quite meet our Indian taste buds. We went for dinner, and the place was fully packed with about a 30-40 minute wait. They do have outdoor seating while you wait and you can order drinks, which was a nice touch. The open kitchen with glass walls was also interesting to watch, and the ambiance overall was good. Coming to the food--the dosa itself was okay, but the sambar, chutneys, and masala were disappointing. The sambar wasn't even warm, which took away from the experience.

    This place is ridiculously DELIGHTFUL. The character of the restaurant, the decor, the staff... it's just a perfect little gem. If you get a chance, try to eat on the patio. I've had Indian food through the years and always like trying new things, but I'd never had a doja or experienced this tradition of food. Of course, I had to try the paper dosa... I mean, if they're gonna name the place after the dish, hit me with your best shot! I have never seen anything like that on a plate, which immediately made me giggle when the server brought it! But, the taste was not funny. It was absolutely delicious. I'm reminded by the H. Jackson Brown quote, "Twenty years from now you will be more disappointed by the things that you didn't do than by the ones you did do." This is one of those places you'll be disappointed to miss.

    So wow... this isn't one of those reviews where I'm saying, "this is good Mexican food" or "this is good Chinese food." Paper Dosa is simply good food. Seriously good. I'll admit, I was skeptical. I've had Indian food a few times and it's never really been my favorite, until now. Paper Dosa changed that. We sat out on the heated patio, which had a fantastic vibe, warm lighting, lush greenery, and just the right size to feel cozy without being cramped. We tried one tasting menu, and of course, I had to order the namesake Paper Dosa. It was phenomenal. The curry, the Chennai chicken, and the mushroom uttapam were all excellent, flavorful, balanced, and beautifully presented. My wife ordered a cocktail, the Palaash, and it was equally impressive. I opted for beer! Which paired nicely with my meal. Service was spot on. Our server was charismatic, funny, and genuinely engaging, he took the time to explain the menu and set expectations, and it made the evening that much better. All in all, Paper Dosa isn't just great Indian food, it's great food, period. 10/10 I will be back here on my next Santa Fe visit.

    Delicious and friendly staff. I had the pleasure of dining at Paper Dosa in July of 2022. This was my first time trying a paper dosa, it was delicious, and the portion is generous. The vibe is upbeat, they have outside seating. I'm looking forward to my next visit to try more from Paper Dosa.     Fantastic first experience! Service was attentive and helpful. Strongly recommend dining on the outdoor patio with its twinkly lights and water fountain - lovely ambiance. Friend's mocktail was refreshing and delicious for $8. Paniyaram starter was spicy and fluffy - like mini muffins topped with shredded veg, lovely presentation. For entree, we split a dosa and an uttapam. The paneer inside the dosa had a texture more like tofu. I preferred the uttapam, which came covered in different varieties of mushrooms and was so savory. Both were served with a cup of potato stew and two dipping sauces. Nothing went to waste, and we both agreed we'd be back!

    Beyond authentic. I lived in India for 2 years for work, and this place is as good as it gets! Ordered a gigantic paper dosa and the crispyness, chutneys and sambar were exceptionally on-point. The ambience is lively and colorful yet understated. Nice date spot. Service was friendly and almost affectionate! The servers really look after and pay attention to their guests - you can tell.

    Definitely a talk-of-the-town spot, you can feel it the moment you walk in. There's almost always a wait, and during our entire visit we didn't see a single table empty. Very busy and energetic. The dosas were good, and the rasam stood out with a nice peppery kick. Portions are on the smaller side, which worked for us but may not for everyone. While it didn't feel fully authentic like Coimbatore, it's still a great South Indian find in New Mexico. Fun vibe and a solid place to dine.

    I had heard really great things about paper dosa in the past and so on a recent day in Santa Fe with some friends, we decided to check it out. I would describe the interior as intimate. It's not a super large restaurant. None of us had ever been and were pleasantly surprised by their tasting menu. It seems like the best route to go because you got to try so many different things. I believe it was three courses, and you could add on a wine pairing. I didn't do the wine pairing instead I got a cocktail, but a few of my friends did. Everything that I tried was absolutely amazing. I started with the chicken appetizer that I can't remember the name of then the spicy basil dosa, and finally the prawn curry. It was all really good and very flavorful. We ended with the rasmalai which a cheese based dessert with sweet cream and was really delicious. One interesting note is throughout the night. You could feel a cold breeze, and it was kind of annoying but upon leaving, I realized that they have a takeout window. Very interesting for sure. I would absolutely come back to try more of the offerings.

    This place is amazing! First of all why order Indian in New Mexico? Trust me I asked the same question but this place is sooooooo Delicious Food: I have to admit everything we Ordered was so delicious. My husband thought that I've ordered so much for a group Of 6 but it was juuuust enough. Price is fair And the service was fantastic. I highly recommend

    A charming spot to enjoy the 3-course tasting menu (an easy $35!) on the tree-lined patio or colorful indoors. I started with a top-notch South Indian Chai that was sweet and warming, lovely from start to finish. It paired nicely with the Summer corn soup starter - smooth but light, slightly sweet and herbal. The Dosa required instructions - many flavors and textures blending with truffle filling - reminds me of an Indian adaptation of the burrito! My main of lamb in an excellent peppered curry had smoky spice cooled by yogurt sauce, a lovely finish to square the meal.

    Man... this is tough. So many people seem to give this place high praise but it feels like even 4 stars is pushing it. I'm going with 4 on the chance that this might be an unusual one-off experience. The good: - the corn soup was outstanding. Seasoned super well, absolutely delicious. We thought this would set the tone for the meal, quality-wise. - the staff was very friendly - The vibe was cool - the prices were reasonable (except an additional $3 to get rice with your curry... that's kind of weird? Shouldn't curry come with rice???) The bad: - everything apart from the corn soup was really not exceptional and borderline bad. The peach and avocado salad was served nearly dry, but even a side of dressing didn't make it much better. The dressing tasted of sweetness and not much else. and the peaches were far out of season. They'd have been wise to get rid of this dish before the peaches stop being good. - the dosa was cooked well but everything that came with it was extremely bland, apart from one very spicy chutney. Spicy but not super flavorful. - the chicken curry was also fairly bland and not very hot once we got it.

    Paper Dosa was the finishing touch to my Santa Fe getaway. Stood in line for a table & it was well worth the wait. Service is attentive. Every bite was full flavor. Ambiance is open & inviting. At the bar, tables indoor/outdoor. I'll be back for sure.

    Great food. The passionfruit pudding was divine and the lamb dossa didn't fail to satisfy. Definitely recommend it!!!

    A Love Letter Written in Disappearing Ink There is a…read moreparticular kind of optimism that drives a person into an Indian restaurant on a Saturday evening in Santa Fe -- a city that, bless its adobe heart, does not exactly overflow with subcontinental options. You settle in with the quiet confidence of someone who once spent a month in Mumbai and now believes they understand spice. You are ready. Reader, I was not prepared. Let us begin, as all great tragedies do, with the Vegetable Pakora. The pakora arrived looking less like the airy, craggily fried vegetables one typically encounters and more like someone had convened a committee about pakora and emerged with a dense, dough-forward compromise. Imagine if a samosa and a falafel had a child, and that child had structural anxiety. The texture was fine. The flavor was onion. The vibe was: lunch. The portion count deepened the intrigue. They arrive in orders of three. Three. Not four, which would split evenly at a table of four. Not two, which would behave like an appetizer. Three -- as if the kitchen is conducting a long-running study in social friction. We ordered two plates and found ourselves staring down six substantial dough spheres before the meal had begun. We had ordered snacks and received a commitment. Then -- plot twist -- Paddy's Chicken Tikka Masala arrived and redeemed roughly forty percent of the evening. This dish is excellent. Genuinely. Charred white meat, not the rubbery pallid cubes that haunt lesser tikka masalas, sitting in a tomato sauce that is smooth, tangy, and wrapped in cream with the casual confidence of someone who has always known they were beautiful. The spice balance is impeccable: heat that suggests rather than insists, sweetness that arrives and then politely exits, a buttery richness that begs to be eaten with naan. Which, tragically, we will get to. The Lamb Vindaloo, ordered hot, was the moment the evening reconsidered its direction. Vindaloo should feel like drama. Goa via Portugal. Fire and vinegar and slow-cooked depth and bright spice. It should leave your lips gently smoldering and your palate alert and grateful. You should need a quiet minute afterward. This vindaloo asked nothing of me. The heat was theoretical. The sauce was what I would charitably describe as present. And the lamb -- I say this with full respect for the animal -- was tough. Not rustic. Not hearty. Tough. I worked for that lamb. The lamb did not want to be eaten. The Gobhi Aloo arrived as a meditation on texture and its quiet disappearance. The pleasure of this dish is contrast: cauliflower with toasted edges, potatoes with yielding interiors, both retaining their individual dignity. Here, both vegetables had transcended identity and achieved a unified softness I can only describe as philosophical. The spices were warm and pleasant but the texture had left the building. Then came the Paneer Makhani, which I did not receive. What arrived instead was Saag Paneer -- a dish I do not order, have never ordered, and specifically pointed to on the menu while saying the words not that one, this one, here, I am pointing. Three times. Nevertheless: spinach. My companions enjoyed it. I watched them the way one watches people board a train you were supposed to be on. And now, the naan. Good naan bends. It yields. It smells faintly of yogurt and smoke and the particular satisfaction of bread doing its job. It behaves like a partner. This naan resisted. It stretched before tearing in dry, fibrous protest. When folded, it cracked. When chewed, it demanded effort -- not the pleasant effort of good bread, but the jaw-working persistence of something baked earlier that had since made peace with its circumstances. When deployed to scoop curry -- its entire reason for existing -- it snapped and leaked like a bread-based betrayal. I wanted to soak up that transcendent tikka masala and instead found myself doing structural engineering. The rice was fine. The rice showed up, did its job, and asked nothing of me. The rice deserves stability and health benefits. A few notes: every person must order an entrée or pay a six-dollar surcharge -- enforced at tables designed for two people with no dishes and excellent posture. Four of us were pressed against the wall with neighbors close enough to critique our naan in real time. Gratuity appears at the server's discretion. Ours was so swamped as to be theoretical -- food arrived via supporting cast, the paneer went uncorrected, and most critically, I could not order another beer while I still wanted one. Reservations strongly advised. The verdict: The tikka masala alone may justify the trip. Everything else is a negotiation. One star for Paddy's Chicken Tikka Masala, which deserves better company. One star for the rice, which showed up and never complained. Filed from Santa Fe, with a beer I eventually obtained at home.

Also, I noticed the oat milk being added to the $7 oat chai was Kirkland brand, which consists of: (filtered water, organic rolled oat flour), organic sunflower oil, calcium carbonate, organic natural flavors, sunflower lecithin, sea salt, vitamin A palmitate, ergocalciferol (vitamin D2), riboflavin (vitamin B2), and cyanocobalamin (vitamin B12) . Some listings also describe it as fortified and organic, with no added sugar noted in one review source. I'm not an Ayurvedic doctor, but these ingredients and the quality of the food have declined considerably over the last years, which is sad. Such are the times...
