Finally got around to trying this place! It was delicious. Freshly made to order. You order and watch the person make it. Crust was thin, but not too thin. Sauce was rich and flavorful. Cheese was tasty and just the right amount of cooked/crispy. Will definitely order again. What I learned: you can not call ahead, you have to go in to order. They post their hours on their instagram story the day of. We've tried to go a few times and they were closed. They will close early if they sell out. Pizza was great! Cooked to order and only took a few minutes. Ingredients are really fresh and don't make you feel so heavy after you're done eating. The pizza is definitely up there with what you can get in New York and New Haven. The Owner was the only person working in the kitchen which can be seen from the counter. The Owner prepared all of the pizzas himself. He is very nice and we talked to him while eating our pizza. We were in town from Louisiana and he assisted us with restaurant recommendations. I've heard and read about Pizza West Chester, but our first time there was a disappointment. (However, read on.) Although I follow their Instagram and occasionally see their hours posted, we decided to stop by not knowing whether or not they'd be open after our visit to the nearby farmers' market. When we arrived a little after 11 a.m., they were closed. Another couple was waiting at the door too. We waited for about 15 minutes, but quite sadly no pizza (and no posted hours). A few weeks later, we went back, and happily, they were open. Wow, we were thrilled! As I've heard from friends, this pizza is best eaten hot right from the box. When we first arrived to order our pizza and told the owner we wouldn't be able to enjoy it right away, he kindly said we could order it and come back. Later, as we walked back to our car, pizza box in hand, we couldn't wait to try it. Keep in mind, they don't sell slices and only have 3 varieties of pizza. My husband and I were speechless as we enjoyed our first slice. The crust was thin and slightly crispy while the slice itself was on the saucy side which we like. Go! This place has been on my radar and I was eager to check it out even though I don't live nearby. I had a chance to drive down for lunch on Easter Monday. I checked Instagram in the morning to make sure it would be open as usual, but like a Greek tragedy, I met my destiny in fleeing it: despite seeing nothing about a closing, upon arrival, a sign was posted on the door that they would not open until 1pm. Pizza West Chester is a highly rated pizza spot in west Chester and i had to stop by and give it a try. It's a tiny little shop and you should be ready to wait for your pizza. After all the hype and the mystery surrounding this place, we had to try it. It's worth it, every damn dime... delicious pizza from the ground up. Definitely try this one! Staff is always slamming, they work hard, it's a pleasure getting a chance to pick one of their pies up. Remember, you have to order in person, it's the only way to get a pie...you can't call, and when they are out they are out. Pizza has a crispier crust, nice sauce, perfect amount of cheeses and an all around great taste. Great pizza by essentially a one man band. With only one person doing the pizza, there is a limit of two pies and a small menu, along with a decent wait, but well worth it. Take out only and no where to sit, but well worth the roughly 40 minute wait. Highly recommended, just understand there will be a wait and a limit on what's offered. read more

I think I came to this place with too high of expectations. Portnoy gave them a great rating and I really enjoyed my experience in the shop. The owner was nice and it was cool to watch him make the pizzas. He used sliced mozzarella, then sauce and then more clumps of mozzarella. I was super excited watching him make it-- looked delicious. The shredded parm after it come fresh out of the oven also made it look great. The owner really takes his time to perfect his pizza and ingredients which I appreciated. When it came time to eat the pizza, I was sadly disappointed. It was not enough sauce and lacked flavor to me. The crust was so hard that I could even bite through it while the pizza itself was quite chewy. It took work for me to eat it because I had to chew it so much. I guess portnoy and I disagree on this one but I'm sure it is just personal preference. The place is cash only and has only one table, so it is not designed for eating in. Speer, the owner, was a wonderful conversationalist who talked "restaurants" with us as we watched him craft his highly lauded pizza in this minimalist establishment. This was the second attempt to try Pizza West Chester while we were in town visiting family. Our expectations had been built up after our initial try was a failure because they had sold out. The pizza was among the best we've ever had. The size of the pepperonis are perfect on the pep pizza, and it had that melt in your mouth quality I appreciate. Ok, this is a tough one. I really love pizza. I love eating it, I love making it, I love reading about it, and I love to see how the industry has been evolving over time. Pizza West Chester has been building a very good reputation so I had to bite. We stopped by on a weekday afternoon between Christmas and New Year's, and they were quite busy. The outside is fairly unassuming, but nice. The shop is situated on a busy street, and parking gets tough, but we found a spot a block or so away and walked in to roughly six people standing inside waiting. We asked how long the wait was, we're told 45 minutes, so we ordered a pepperoni for $24 cash. In the shop we're two employees: the owner was making pies, and there was a counter person taking orders. We came back in 40 minutes and our order was ready shortly thereafter. I will say, you can tell the owner is very passionate about what he does, and puts a lot of care into making the pizza, which, by the way, had a layer of sliced cheese placed on top of the dough, then sauce, then grated (I'm assuming all mozzarella) cheese. He personally brings each cooked pizza over to the retail counter to box it, freshly shaves a hard cheese (parmesan?), tells you he hopes you enjoy the pizza, and closes the box (doesn't fold the sides in). I was so excited to dig into this, but was apprehensive over how well done it was. Unfortunately, I wound up pretty disappointed in the taste. Keep in mind, though, not all pizza is the same, and this pizza simply wasn't my style-I'm more of a NY and Neopolitan style, and I would say this is more of a mix of a NY/bar style pizza, just not my cup of chowder. I commend the owner for his passion and success, and I'm sure he will continue to thrive-his business model seems sound and he puts a lot of care into his shop, product, and customers. I was in the area for a summer lacrosse tourney and a friend sent me an IG reel for this place not knowing I was 15 minutes from it! Meant to be I guess. It's a great pie. I live in upstate NY but haven eaten a lot of pizza in NYC and Long Island. This is a slightly different style but one of my favorites. First off the crust under the sauce is a perfect combo of thinness and chew. The crust around the pie may be too "burnt" for some but I like that. The sauce was sweeter than I expected but the amount of cheese on the pie and the shredded parm on top makes it all work insanely good. I love that it's only three options and it's made to order when you walk in. He's an artisan and cares about his craft. Btw they do take credit now. read more

We stopped in yesterday for a pie on our way to support the Phillies at the Big Bus. Chatted up the owner that was busy filling orders. He shared a couple of tips so we could give making his version a try as we're not from the area. Super friendly! The pie, just cheese, was hot and delicious!! We took ours to go and set up camp to enjoy outside. All of us agreed it was excellent. Light char on both the top and bottom- which, for us, is perfection. Crust was thinner- but not too thin. Def able to eat easily as it was just rigid enough- slight dip at the tip, as you'd hope. Not necessary to fold. Wish we'd taken a photo but it was gone too quickly. Would travel out of our way to have again. We'll be back to try pepperoni next time we're within 50 miles. After seeing Dave Portnoy review of this pizza, where he scored it a 8.4 (if you know you know), I knew it was my duty to try it as a West Chester resident. I came into the shop to put in my order after work since I forgot to call ahead, and to my surprise the pizza was done in 15 minutes which seemed super short for such a busy pizzeria. I got a pepperoni pizza, which was one of the best that I've had, having a perfect amount of cheese and sauce ratio, while being able to taste the quality in each element of the pizza. Their crust is also amazing and holds up very well, but if you are not a fan of a charred crust I would recommend you ask if you get yours less crispy. But since I do enjoy a crispier pie, it was right up my alley. In addition it was fairly priced (around $26 for a full pie)considering that there are many lesser quality pepperoni pizzas that cost the same if not more. For the quality, taste, and service, you would be missing out on a truly wonderful experience. (the only downside is that they are cash only and do not sell slices all the time) read more

My wife and I have been on a really restrictive diet, and I remembered hearing about how good this pizza was, and we went for it. So worth it. This pizza is simple, but with quality ingredients (spicy cup pep), and the execution was ON POINT. The menu is just cheese or pepperoni, one size or slices, so you know that they know their pizza smacks. Cash only too. So, I've seen and heard all the hype. I'm off from work this week and I live about 10 mins away on the other side of town. So I figured I'd give it a shot. The pizza itself is good, not great, certainly not life changing. For the pizza itself I give 3 stars. I deduct 2 stars for the burnt crust that is also so wide that it robs you from the cheese and sauce you've paid $20 for on a plain (24 for pepperoni). And I didn't want to eat it because it's burnt, hard, and mostly bubbled anyway! Like pepperoni? Good - hope you don't like any other toppings cause there aren't any. Finally I get my pizzas and the guy just closes the lid without tucking it in to keep it hot. It wasn't an accident - I saw him do it that way for everybody. Would it destroy the bubbled, hollow, burnt crust? Now, for the kicker - you can't call ahead to order. You have to walk in to order then stand and wait - 45 minutes for me tonight. And you better have cash or an ATM card because it's cash only. I get that this guy is really into pizza and takes it seriously, but dude, c'mon - it's just pizza. I'll keep going to West Chester Pizza Cafe 2 mins up the street where the quality is just as good if not better, the price is lower, I can pay with a credit card, and I don't waste my time waiting for some pretentious "artisan" to grace me with his pie. read more

UPDATE AS OF 1/14/23: Pizza has become a local attraction, and naturally, the business has boomed, which is great! However, rather than building on the demand and expanding the business in a sense, like I mentioned before, it's become an attraction. There's now a limit on how many pizzas you can buy, IF you can even get one after waiting a minimum of 30 minutes. i have wanted to try this place since one bite. I was out in newtown for a round of golf yesterday so i stopped by after and i am glad i did. the cash only boutique pizza spot on market street did not disappoint. fortunately it was pretty empty when i made it there around 2pm. i ordered a plain pie it came out to about $20.25 and i went for a quick walk around the area while they made it. I got back about 15 minutes later and they passed me the half open box to keep it from getting any level of soggy from the steam coming off of it and i walked back to my car to eat some before driving back home. also just to mention the service was good it was a 2 man team one held the register and the other manned the oven and put the pies together, the shop is also very minimalistic in style and clean. it's really a togo spot i didn't really notice anywhere to eat. I got back to the car and opened it to find a pretty close to perfectly charred pizza with a really nice balance of sauce and cheese. I will say that it was but heavier than i thought it would be but it's was really good. I think it must be a sourdough base cause the crust is nice and crunch but very reminiscent of a sour dough baguette in structurally. Great flavor. Not much more to say but an all around great experience, well priced, fast and good structure and flavor. will def be back again next time i am in the area and need a quick bite to take back home. read more

Best pizza around. We had a guest come over and figured we would get 3 pizzas. I paid, they had 17 pizzas ahead of my order. But the pie doesn't need long in the oven. It was ready in about 20 minutes. I don't know if I can ever go to another pizza place after having this. But this will definitely be the pizza for special occasions and guests. You can watch the pizzas being made and you can realize that the magic started hours before you ordered. The dough recipe and sauce are absolutely perfect.
