A classic wonderful dish, full of flavors and textures. Broken eggs with duck ham, and pedron peppers, another standout. Every place has their version of broken eggs and Filosofia presents an excellent interpertation. Two soft cooked eggs with thin sliced jamón de pato, on top of patata hervida, with roasted Pimientos de Padrón. Simple, delicious and such a flavorful combination. Then we tried the croquettes, five or twelve to an order we went with five. Beautifully prepared, cooked to perfection. Stuffed with a savory yet lightly sweet carne de res filling. So we opted to have it with cheese and the cheese was very interesting, very tangy and liquidy so it was optimal to eat it in one bite, but the cheese was so rich.
