Would give this place 10 stars if I could. I ordered a coconut mojito, flaming queso, and quesidillas served with beans and rice. Service was friendly and quick. Food was amazing. We drove 10 hours to get home and I packed a cooler with my leftovers just so I could have them when I returned home. One of my teen sons loved the food, the other one didn't care for it. The corn masa matrix was extremely dry and crumbly like breadcrumbs but I envisioned it to be moist and hold together. Chicken barely there and dry. The cheese- um I expected a nice gooey melted cheese but I received a very dry piece of hard stick cheese in the middle. We didn't care for the bean/ corn salsa. Seems to need more seasoning. Very comfortable seating and a delightfully relaxing environment greeted us and we were quickly brought our drinks, along with chips and salsa. The chips were light and full of flavor. The salsa was creative and surprised me, as it was full of black beans and corn. I did not expect it but I really enjoyed it. I ordered a vegetarian quesadilla full of a great goat cheese. It also had a nice kick. It was beautifully presented and popped with a lot of color. I confess that I tapped out after eating the quesadilla because I was too full, but my companion, who ordered the same meal as me, finished the black beans and rice that accompanied it. If you enjoy patio dining when the weather is nice, Rolando's patio is great as it's right up against the rock, providing a beautiful natural setting. However, the patio isn't all level due to its nature, so you may be sitting at a slant. We found a good spot as we were there early, pretty much had our pick of tables. Service out there was great. All our food was good. My margarita was good but too sweet even though I requested it be made less-sweet. Glad I did or it would've been undrinkable for me my taste. I cannot believe this place wasn't packed when we stopped in for lunch today. This hidden gem is amazing! Every dish was fresh ingredients and delightful flavors. I had the quesadilla de chivo. Goat cheese quesadilla with shrimp. My son and husband both had the Cuban Platter with pork. Everything was cooked and seasoned perfectly. Our server Paul went above and beyond by bringing bowls of water to our dogs. They are welcome on the patio which is nicely shaded with large trees. read more

Service was bad. Took forever to get anything. She didn't seem thrilled to be there and we felt like we were bugging her. The free chips and hot sauce- chips completely stale. I can say that has never happened to me at ANY Mexican restaurant. I was shocked. They were actually chewy. They got us some others but they weren't much better. We came to Rolando's 3 times during our 4 day stay in Hot Springs. The first two times were for drinks in the Speakeasy. During our second visit, we sat on the patio and were served by Grayson - he was awesome. We enjoyed to conversation with him and decided to come back for dinner. Grayson took care of us again, and the service was perfect. We started with chips and queso and then had the Don Quixote burrito, the pork quesadilla, and a bowl of chicken and rice soup for dinner. It was so cool to have lunch here. Upon entering I peeked at the first floor seating area and then took the steep steps ahead of me to see what was upstairs. So glad I did. They have a lovely roof top dining area but it was 110 degrees heat index so inside we stayed upstairs inside. The bartender and one waitress and the four of us upstairs made it our own private party. Lots of light in the front room, a couch area to hang out in as well. We had great service. We were brought chips and a black bean and corn salsa upon seating. It was chuncky and flavorful without being spicy and the chips were crispy. We split the Jose quesadillas with chicken, that were excellent, served rice and beans. We had never had a thin chicken breast in one whole piece on a quesadilla. We both luked the texture and flavor. Our daughter and sone in law had Tencha's Taquitos fir an appetizer and thought they were very good. They also had the chicken enchiladas as their entrée . Which they loved. All rhe food was excellent, service was surpurb and it was so cool to eat upstairs in that setting. We had the tres leches cake for dessert. We stopped by to have drinks and appetizers on the patio on Friday night. We were greeted and seated promptly by friendly staff. The back patio is beautiful and the weather was perfect for outdoor dining. They also have a speakeasy upstairs that has a great hidden feel with comfortable seating and a view to the street from the front. The downstairs remains the Restaurant it always has been. We enjoyed the fabulous salsa-and the queso fundido. Margaritas were the special and mine was delicious. The best part of the evening was talking to Saul who has been the cook for 20 years and is now an owner! He has plans to continue serving the same fabulous food and bring back live music on the patio and few other suprises. We are so excited and look forward to visiting again soon! The staff was friendly, attentive and communicative saying they were short staffed and so wait times may be up, but as a party of two, we were seated, served and done in under an hour. The food was good and the drinks were great. The servers were friendly and helpful. However, if we had known about the decor/environment, we would not have gone. We had to ask to move several times, and it got embarrassing. First, we went upstairs to the outside patio. It was lovely with the lighting. However, we tried multiple tables and couldn't find a table and chairs that were level. They all wobbled. The chairs were also very small and uncomfortable. Not great for anyone with weight issues or back pain. Then, a musician came out to play. It was so loud we could not have a conversation, and his lyrics were very crude and sexual in nature. We immediately asked to move. The server moved us to the inside room upstairs. It looked totally different than the downstairs. There were naked pictures of women on the walls, tons of occultic and Halloween decor, a bar/club look, and rap music. Not at all what we saw on yelp, and we felt very uncomfortable. We immediately asked to be moved again. Downstairs was suitable enough to finish our meal, but the pictures were still a little weird, creepy, and distracting. What to say about Rolando's. Our first experience was such a mixed bag, it's hard to describe. We entered to find a sparse dining room (with nobody at the hostess stand) but assumed maybe everyone was on the awesome outside patio we'd seen advertised. We asked for the outside patio and a waiter points the way and says "good luck". I thought he meant getting up the stairs, but perhaps not. Once we make it up the stairs to the patio, we're promptly greeted by a nice waiter who helps us find a table and a waitress comes by with menus and waters and says she'll "be right back". About half the tables had customers, so nothing crazy - but it was a bit before we saw our waitress again. When she showed back up she asked us "if we were ready to order cause a group just came in downstairs and we should get our order in". Since she'd never taken our drink order, we placed both our drink and meal orders. It's not long before our food comes out (sans drink orders) and the food is just ok. Portions are kinda small. My tamales weren't exactly hot. The spoonful of black beans and rice were tasty but were covered up with chopped bell pepper and cooked zucchini- I couldn't find them at first. Was it a bad experience? No. Was the food bad? No. Was the service bad? No. It just sadly had the makings to be great, but just wasn't. read more

The flaming cheese dip was a big ball of rubbery cheese. The server went and got the owner and he said that they get complaints on it all the time. He said they only left it on the menu because the previous owners had it on there. Refused to remove it from the bill. Blamed the kitchen for holding it too long. Said it has to be eaten within a few minutes of firing. Just said he hoped we would be back even though he could clearly see we did not eat it. I previously ate here last year and it was fantastic. I think they're hustling and trying hard but seem disorganized. The complimentary appetizer of chips and salsa was mediocre. Our server was helpful in making a selection for my main, but ultimately i was served the guacamole tostadas rather than the grilled burrito i ordered. Oh, well. The tostadas were heaped high with guacamole (good!) but way too many red onions were tossed on top. It came with black beans and rice, which made for a full plate. We sat on the patio, a nice outdoor space that could be spiffed up a bit. The tables and chairs are worn and many of the outdoor patio lights were burned out. read more
