As a teen ager, I remember being in a pub where I grew and discovering high quality Stilton from England for the first time. That was a game changer. I did like Bleu. Over the years Ive tried a number of very good varieties but then last year I discovered the pairing of Société roquefort and Sauternes at El Gaucho in Seattle. Wow. Another game changer. Even though we were already full the combo of the cheese and wine were so incredible we polished off a wedge. The folks of El Gaucho were so nice they offered us another wedge. We ALMOST went there. It may not get any more classic than that pairing but you still have to start with quality ingredients, and Société is definitely amongst the best I've ever tried.
