Every dish felt intentional, layered, and honestly on par with anything I've had on the West Coast, which is not something I say lightly. Billings doesn't usually get this level of culinary creativity, and they are absolutely raising the bar. But what really sealed it for me was the atmosphere behind the scenes. Salads and soup came out, my onion soup was very good. A major disappointment was "we are out of baked potatoes " which seems odd since one of the potato options is made with baked potatoes?? After some time our entrees came out. My ribeye was actually cold but the mashed potatoes were hot so obviously the steak sat waiting on other entrees, we only had 4. I told the waiter to tell the chef and he said he would, not would you like me to take it back? However, as we continued eating, they became noticeably dry. We also realized that the cheddar cheese was missing from both burgers, and my wife's avocado was also not included. We later learned that condiments like mayo, ketchup, mustard, etc. are provided only upon request on the side, which would have been helpful to know upfront. My wife and I were engaged in a good conversation and our waitress was busy but still attentive, so it wasn't until we were most of the way through the meal that we discovered the issues. When we brought it to Louisa's attention she contacted the manager who was very understanding and kindly credited the burgers from our bill, which we appreciated and felt was more than fair.
