No wonder they got their 1st Michelin star in under a year. In typical Japanese humbleness (how many exec chefs do you see polishing with their staff at then end of service?), chef Yoji said he didnt understand why they gave it to them playfully. It's because it's delicious and creative! Make no mistake he did time most notably at Osteria Francescana under Massimo Bottura. Some of the elements and technique of O.F. Show here but never overshadow the unique confluence of Yoji's Italian and Japanese flavors/sentiment/interpretation. Co owner Alfonso runs and elegant but unstuffy front of house, which compared to other higher end dining establishments in Milan is fairly relaxed. The charred white fish and the calamari were divine. Wine list were also impressive. The one star less was due to the staff who weren't the most knowledgeable and maybe two out of Three dishes that were a bit "fishy". I think establishments at this level can't have fish dishes that taste fishy! If this were in nyc it would be a well known place with extremely pretentious crowd but given its location Milan, the other patrons were quiet "normal". At times we wondered if places like this will stay in business for years since I can't imagine the local Milanese people be thrilled with this type of scientific gastronomy. Will I be back? Absolutely. If you want an experience that is out of the norm in Milan but still have ties to Italian cuisine in presentation, a few flavor here and there then this is the place.
