I come here frequently for the hot and sour soup and fried spring rolls. I love both. If you're looking for a really good, authentic pho, you can go somewhere else for that. They don't use fish sauce here that gives the broth that umami flavor, and I see reviews complaining about the lack of flavor. The owner is sweet, and the service is always good. I so badly want to give this eatery five stars, because the food is cooked by a culinary expert. It's tasty, completely, delightfully fresh, and delicious. The biggest problem with this place is their hours. They're usually closed on weekends. That's very frustrating. Oh, and they don't believe in plastic, and will pack your soup in cardboard containers, put into paper bags. It has resulted in disaster on the ride home a couple of times. This was the worst Vietnamese food I have had in a long time. No flavor at all, not in the Pho, not in the Bun. So sad because we just moved to this area and so wanted it to be delicious. I didn't have a good first experience with their pho when I went during their opening time and haven't went back since. I was craving a banh mi and they were the only place around that made it so I decided to give it another try. While the flavor of the meat was good, it just didn't taste like an authentic banh mi. The pickled veggies weren't pickled and on the bottom instead of top, the bread was kind of soggy/stale. I also ordered the fried egg roll which seemed to lack flavor, the shrimp summer roll was basically a salad roll with mostly lettuce and two strands of noodles inside. I love Sprouts! The food always tastes so fresh and delicious. The restaurant is clean and has adequate seating and the owner and staff are wonderful. My favorites from here are the Fresh Spring Rolls, the Fried Spring Rolls, Noodle Salad, and the Vietnamese Curry (chicken), however anything else I've tried from the menu has been very good. The shrimp spring rolls are very flavorful, filling and comes with a delicious peanut dipping sauce. The beef pho is our go to order and comes with the broth and noodles separated. I've also had their chicken curry - super tasty with great coconut flavor and tender chicken. The chicken banh mi is also great. The garnishes are fresh, the chicken slices are plentiful and covered in a sweet yet light sauce. It's nice that you can also order half orders of the banh mis, so you can mix and match with other items. You can get a tasty and very filling lunch or dinner for around just $10. Visited Sprouts for the first time yesterday and it was definitely yummy. My co worker got the pork bah mi sandwich and it had very crunchy bread and perfectly grilled pork with the fresh veggies on the top. She also got the Thai ice team that was enjoyed. I got the grilled beef pho large bowl and it was good super fresh thai basil on top with a yummy broth, beef, sprouts and glass noodles. They have a few tables you can sit outside or inside We will definitely be back to try some of the other options that are offered and you can also place an order for take out. On a cold day like today, I figured soup was a must, especially pho. And I know I harped about the pho broth in my previous Sprouts review due to the lack of flavor, but I figured I'd risk the long shot and try it again to see if my initial statement remained true. I ordered out this time around since I didn't have the time to dine in. I went with a small beef combo pho and a side of fresh shrimp spring rolls. The turnaround time from me paying to me actually receiving my food was about 10 minutes, which is pretty great, especially if you're in a rush to get back to work. Everything was packaged up nicely for me to carry back to my office. The amount of broth they give you for a small order didn't seem like much, but it filled out pretty well once all of the soup components were added. The beef, noodles, scallions, and white onions were packaged in one container, while the lime slice, bean sprouts, and basil were packaged separately in a Ziploc bag. The meal also came with a small container of hoisin sauce and sriracha combined, but it only seemed like the hoisin made the appearance. Once everything was added, I dug in. The broth was much better this time, with again, zero traces of MSG. My mouth wasn't questing for water after every spoonful of broth, which is the best way to tell for MSG. Very hearty, very light, thoroughly delicious. The noodles and meat components were also prepared perfectly and tasted great with the stock. Can't forget about the spring rolls. I'm still wishing Sprouts could combine the pork and shrimp elements into one spring roll, but for now, I'll take what I can get. These rolls are fantastic and have a nice snap to them when you bite down. The ingredients in each roll tasted super fresh and the peanut dipping sauce wasn't overpowering to the actual dish. I'm a fan. All in all, I was more impressed this time around from Sprouts than I was from my initial dine-in experience. It's tough to judge a good bowl of pho sometimes since the flavor can get caught under tons of unwanted flavor (MSG), but I think Sprouts has a great foundation to be a new up and coming Vietnamese spot within the Bethel area. read more

I have worked in the Downtown Bethel area for 3 years. I was going for a walk one day when I noticed this place tucked away behind the main drag (behind the Rocco's Deli plaza). I grabbed a menu and thought to myself that it was on the leaner side. I immediately looked up the place on yelp (per usual) and my eyes widened from the glowing reviews. Next week I convinced a co-worker to come with me to try it. I ordered a Chicken Pho and she got a chicken sandwich and we split fried spring rolls. The spring rolls were spot on - A++ ! The best part....the sweet and sour sauce is home-made (at least I think...it is amaaazzzing (so descriptive I know, but try it trust me!) I have been back many times over. Fresh fresh fresh, like Vietnamese should be. The only complaints people have about sprouts is the broth is sweet - they do add sugar, but the reason is because Sprouts doesn't have plum sauce on the table. Plum sauce has gluten in it, and they're labeling their pho as gluten free. It's a very classy and somewhat risky move to make since people are on the prowl for authentic pho, but it hits the spot for me and gets a solid five. The other complaint people have is that they run out of chicken pho. Unlike some places in Seattle which use the same beef broth and just toss chicken in the bowl, they brew up chicken pho here from scratch and only have what's in the vat to serve. If they run out, they run out, and it's that good so come early on Friday if you're going at all. Order up front, grab a table and enjoy the ride. Tip in the jar up front after you order - it's a family run place so they share it and I'm sure they appreciate seeing the gesture. read more

No offense to "fusion" places but it is very nice to see an Asian restaurant focus on a particular country's specialties. Sprouts focuses on Pho (soup), salad, spring rolls, noodle dishes and bahn mi (sandwiches). The place seems to be more geared towards lunch with a small-ish menu and earlier closing hour. My first time out I tried the shrimp spring rolls, meat ball pho and a steak Bahn Mi all of which was split between two people. We both agreed that the food was fresh and delicious. Everything featured fresh herbs and bright flavors that made for a very interesting meal. Pho was the stand out with noodles, awesome broth and meatballs that were solid, firm, super lean and tasty. I read someone else's review of Sprouts saying it wasn't authentic Vietnamese food, and while I have so much respect for the owner and her family, I have to agree. I have given this place so many chances and unfortunately it does not have that same homemade goodness such as Xay's Kitchen or Le's. Sprouts' strong points are definitely spring rolls, egg rolls, and Bun bowls. But their pho, curry and hot & sour soups sadly fall flat in body and taste. I'm not sure if these dishes are catered to "non-Asian" tastebuds but I just think the right ingredients are not used. Tried Sprouts for the 1st time today after seeing great reviews and trying to find a good place to take friends that were visiting from out of state! We were sooooo disappointed from the time we ordered. They were completely out of pork and banh mi AND the "cold noodle" dish which I'm assuming was vermicelli (although the girl that was taking my order didn't know what vermicelli was....yet she works at a Vietnamese restaurant...weird!) Therefore, our entire group ordered Pho....my husband speaks Vietnamese and has been part of the Vietnamese community for years.....meaning we know what Pho should taste like....and this was terrible, tasteless, and bland. There were so many noodles in the broth. They also didn't provide any Hoisin sauce to add:( Cleanliness was also a problem.
