Now being a coffee enthusiast (snob) I tend to have one stipulation about a coffee house. And that is that they can make a flat white. Oh can this place make a flat white. Perfectly extracted espresso, milk steamed perfectly (creamy, not frothy) so it had that delicious sweetness. They even pour it with the fancy rosetta, which left me little choice but to take a picture of it. There are, however, a few reasons this place doesn't get the full 5* treatment. It's fairly reasonably priced (my flat white was £2.10), but you can get better coffee cheaper. Also, they do only serve one type of coffee. But then , this was only their first day of business. A few teething issues aside, this place has massive potential. A very, very impressive start.

Let's start with the things they're doing right. First of all, I love the interior. They've chosen the most beautiful, light airy unit and have been respectful to the original features (especially the gorgeous, large windows). The branding is cohesive and extremely endearing, with little bees on most things from the menus to the counter. They are also part of a charity which helps the preservation of bees in the UK, which I loved! I'm also pleased to see them using Artisan Roast beans for their coffees and lots of locally sourced produce for their food. So what's the problem I hear you cry? Well it was one simple (yet usually delicious) word: PANCAKES! I ordered them and they were completely raw in the middle. Again, I'm hearing you say "3 stars for raw pancakes is a little harsh, isn't It?!" So I spoke to the server about my raw pancakes, to which they said sorry and took them away to make me a new batch. Now, the pancakes that were returned to me were burnt with a slightly, less raw middle. They were genuinely worse than the first ones. Not one server came to ask me about the second lot , and the owners and managers never came over (even though I saw that they were informed in the first instance). When my plate was taken, the waiter asked if they were any better because I had left all but one bite of the burnt pancakes. I explained they were even worse and this guy is the reason that honeycomb aren't getting 2 stars! He apologised and agreed with how bad they looked. He also took the pancakes off the bill which I really appreciated. So all in all, go here for coffees and to sample their cakes but "bee" careful not to order the pancakes!

I'm sorry they sent you outside, but really? 3) This place has great outdoor seating and plenty of space for those of us that like to drink chai lattes and break out our computers for a little bit of starbucks office time. I think this starbucks knows where the majority of their business is from and does it as well as a starbucks could. A nice blueberry blue paint pulls the simple setup together. My only complaint is that there is not a door hook for a bag - but of course that's never a requirement for a restroom, only a plus. As a side note to my visit, they pulled me a well balanced shot of espresso and then made me an excellent latte as well - actually it was about 8oz or the size I've come to see as a cappuccino in the States. My best guess is that it's just the English muffin wasn't as sturdy as I'm used to and I'm used to it that way. The peas a la salt came over sourdough bread with bacon, black pudding and a poached egg. Same as the Bennedict, it was all yummy, but not amazing. The peas were very far from mushy (which is good), but maybe could have been a bit firmer. Things just didn't quite come together the way I would have hoped.

Also conveniently accessible by bus. There is not much sitting space, such best to book in advance. We got a lovely table at the front window (which by the way is the only table in the front of the shop). I believe there is a very small sitting area in the back. You can find lots of chocolate variations on display on cupboard shelves. At the moment they offer 10% off chocolate bars before a certain time of the day. There are also macaroons, ice cream a (not gelato), pralines and little "cakes". Above the main entrance you see the drink menu written on huge chalk boards: Traditional chocolate, one for kids and one for adults, white chocolate, milky chocolate, dark chocolate and much more. They do coffee too. I ordered salted caramel ice cream and milk chocolate, which was the best hot milk chocolate in Edinburgh so far, and not to mention I got served plenty of it in a big mug. Definitely worth the money. Must confess, my eyes were bigger than my stomach and next time a hot chocolate will be plenty :-) They are also present with stalls at various Edinburgh markets, like Stockbridge.
