Chef Yamamoto serves gorgeous dishes, which he prepares front of house for all to see. His broth is delicious and the tofu was meltingly soft. His signature of 'Griet' fish done 3 ways is a revelation. The jelly is given texture by the addition of Griet roe, and the sashimi of the same fish is lightly cured and seasoned by being pressed in seaweed for 24h. Wonderful dish where everything just works. Price and quality are startling with various appetisers and immaculate dishes coming your way before finishing with a plate of generous sushi. Otoro tuna, Unagi etc. we'll crafted, with his rice being exceptional.
