Though I was…read morejust there for a cooking class (Sauces 101) I would like to spend a little time understanding what else goes on in that facility. My class was about 15 people all looking to learn about the mother sauces. Frankly, I took this because a friend was taking it and why the hell not? But there were people there to really learn. Like, never touched a dish style. I was surprised that the class wasn't individual cooking stations but more like a watch and learn. There was some class participation but you're not making your own. That's the first thing to know. The second thing is that it's like being back in a legit classroom. There will be idiots, there will be knowitalls, there will be class clowns, there will be tedious questions and please repeat thats. Our instructor was so kind and patient with these people, long after I would have asked them to test the boiling oil please. I wouldn't pre-eat exactly... but I also wouldn't go starving. You may end up eating a full meal but I'd be prepared not to. After we made each sauce, they were poured over pasta in a little ramekin and distributed. The things I'd like to see included: -- a way to watch the chef without leaning over the table. A mirror? A flat screen? Something so she doesn't have to tilt the pot precariously. -- an email later with the recipes vs. the paper recipes to take home -- a big disclaimer for dummies that if you're going into a class to make sauces, they're probably not going to be vegan or gluten-free. Overall a good experience. I definitely learned some things and hope to apply them to my next big pot of mac n cheese.

First off the reservations were pretty open mid-week; I had booked for Tuesday several weeks ahead of time but then had some plans shift and was able to change my reservation to Wednesday just a couple days ahead of time with no issues. We walked in through the front as the back entrance wasn't really obvious from the parking lot (which is quite small), but that was cool as we got to walk by the deli counter and see the meat and pickled veggies etc that were for sale. Our server was great, very helpful in suggesting items, explaining the menu, and answering any questions we had. On her suggestion we started with the sauteed mushroom appetizer but also requested the black garlic butter to be added on the side (I don't think there was an up charge) and this was a great choice! The mushrooms were tender but with a nice bite and super flavorful. We also got the grilled oysters- I forgot exactly what was in the sauce it had miso and something else, but it was so rich and flavorful! I couldn't decide what was the best between the two apps they were both amazing. The husband ordered the antelope over regular fries (as he doesn't like sweet potatoes) which they were happy to accommodate. It was delicious- tender and perfectly cooked with the chive butter on top. I had never had antelope before and found it very pleasant, not very gamey but with a slightly different flavor than beef. I got the quail over grits with a creole sauce and sauteed kale- amazing! It comes with two quail that I think were spatchcocked- the only bones were in the legs and wings so you could eat it easily. The grits were creamy and the sauce with the kale and quail was delicious. I was able to finish my whole meal but was pretty stuffed at the end! Our waitress encouraged us to get a dessert but when we declined brought us out a bowl of chai ice cream to share as she said she wasn't going to let us leave on our anniversary without a treat! All in all a great experience, only complaints are that they don't serve cocktails (there are plenty of local Texas liquors to choose from!) but we did enjoy a glass of wine, and then went next door to Vic and Als after dinner for a dessert cocktail!

My friends tried the Grilled Quails and Mushroom Paprikash. They enjoyed their dishes. For appetizers, we shared the spicy carrot tomato cream cheese and carrot tapenade on flat bread crackers and beef fat fries. They sound yummy, but I thought they tasted rather dull. We also got the marinated beets to share with our entrees, the group liked it. For dessert, we ordered the Strawberry galette with buttermilk ice cream, and it hit the spot. The best part was probably the service. Our server was very attentive with good timing. We didn't have to wait long to order anything, and she was very nice with a sweet smile. It's a farm to table butcher restaurant. Decent casual chic ambiance. They serve beer, wine, coffee, tea, and mocktails. We got parking easily because we arrived early.
