The ladies who make them once made a video outlining the process, but I think the real recipe is kept in a vault in some bank in Switzerland. They even auctioned a whole pan one year. I remember students running to the cafeteria at the bell to be the first in line and get the best pickings. There was always a line to get them. One time, I was late and didn't get a biscuit one morning. At the end of recess, I saw a lonely biscuit with one bite taken out of it sitting at the top of a mound of biscuit debris. I had a serious envie for some buttery goodness. You better believe I grabbed that biscuit off the top of the trash an ate it. There is an art to picking the right biscuit. You want it to be fluffy, buttery, but not too over the top. If you're feeling frisky, you can add some bacon and cheese. But nothing beats a $.50 plain biscuit at recess. I've gone back a few times since I graduated to remind myself of what I'm missing out on. If you're ever passing through Thibodaux on a week day, you owe it to yourself to pass by and grab a biscuit, if they haven't sold out. Last bite: the butter-soaked center of the biscuit (I'm one of those weird people who don't like the crispy edges)
