Sure, that's great for the business, but for the customer, that means less attention and a lot of hurrying. Even with a reservation, we were told to be out within 90 minutes. What?! I just got here and you're talking about kicking me out? Not a great way to start... At the table, we literally had 3 minutes to look over the menu before the waiter/host interrupted and told us to go for their set menu (routine of salmon and tuna), which will surely make us "full". What?! I'm not here to stuff myself, if nothing else, at least have some respect for your own food. To buy us a bit more time, I order tea and ask the guy to give us five more minutes. Immediately, he storms off to another table... Luckily, an older lady with more sense of customer service comes to serve us after bringing our drinks. When ordering, to my surprise, neither toro or hamachi were available, despite being displayed on the tabletop menu. We end up going with a few other nigiri and two rolls. The nigiri is nothing special. The fish did not taste fresh or flavorful and there was absolutely no interaction between the rice and the fish. The rolls were surprisingly large. Perhaps due to the overuse of sauces, but again, the fish flavour does not come through. Very very disappointing for a place that seems authentic and masterful in its craft. Final word: I probably should have taken the young host's initial advice and filled ourselves up with the simplest rolls they know how to make. This is definitely not a sushi restaurant, it's a buffet.

Service was slow because the the wait staff was new and there was only one sushi chef which was also the manager. It didn't look too good because he was managing the team and trying to teach/call out their mistakes while he was making the sushi orders for the whole restaurant. Another sushi chef came in to help but he was in and out of the kitchen. It was a bit chaotic. The fish quality is good, but unfortunately it gets muted out by the wet rice (need to work on their sushi rice as its too wet, has potential) and the ratio of the rice. The tuna carpaccio (€13.80) sauce was way salty. It was more of a miso sauce versus the vinegar mizu-like sauce. The sauce overpowers the sushi instead of complementing. Usually for me, a sushi house like this is either good with salmon or tuna...not both. For this place the salmon is better. Ordered the sashimi set (€23.60) and came with three pieces of tuna and salmon and four pieces of a white fish topped with fish eggs. Not really worth it. All in all the prices are pricey for what you get and also the rice is not good. They do have potential because the sushi quality is okay. They are in fact under new management. He hopes it'll be better in the new year. At the end of dinner we wanted to pay by card and the waitress said they didn't accept cards for the evening. So we had to run out to the ATM. I said there should be a sign outside for this... She said there was one on the door, so then I felt it was my fault for not looking. But then she came back and said the sign isn't there anymore. Therefore, annoyed. And also...put one up! The wait staff just were so clueless...nice and sweet, but just not on it. The manager/chef was right there and I'm sure he was aware of this, an apology for the inconvenience would of been nice. You can try this place out and see how it turns out as they get themselves together. I probably won't be back as sushi is a novelty around these parts and I want to go somewhere where it's a sure thing (ie. Tatsumi).

The udon was average. We also picked out some items from the rotating conveyer belt including green seaweed, black seaweed, and a roll of salmon sushi. Here is the reason for my 1/5 stars: Each plate you select off of the conveyer belt has a different color indicated on the outside rim of the plate. The menu clearly indicates how much each color plate is. However, there are two very similar yellow plates but the restaurant argues that one of them is green! In fact, the one they think is green is actually nearly identical to the yellow color in their own menu. In summary, this restaurant is scamming customers with this coloring discrepancy. If they clearly marked the colors then this wouldn't be a problem, but I strongly suspect they do this intentionally, and will continue to do so. What a disappointment.

They serve a shorter menu than many of the other Nobu restaurants but all the classic dishes like the Black Cod with Miso are there. The sushi were ok (hard to make the difference between those and the sushi from much cheaper real Japanese restaurants across Europe). But in summary it was excellent, with good fast service and in the amazing setting of the Badrutt Palace. A trip to the Palace is I guess a necessary stop in a St Moritz trip and the restaurant is located in a very pleasant room with elegant and comfortable wooden chairs. What is noteworthy about this place during Christmas is the clientele, as this hotel is where Europe's elite converge during late December, mixed with a few middle easterners and Russians. They engage in a delightfully conspicuous gameshow of "who came out of the most expensive vagina and can prove it by how they dress", which is amazing to watch. You get the sense that the only people who "earned" their wealth in this old money crowd are the young attractive females sitting with the decrepit older well dressed men, both staring at their mobile phones for most of the meal. This place is perhaps worth it for the people watching alone!

This was the best dessert I've eaten in a very very long time. I know that tofu doesn't sound appealing to most people but this is the most delicious creamy ice cream combined with a scrumptious fritter. My mouth waters just thinking about it. They should rename this place to AMAZING JAPANESE DONUTS and I am sure it would have a line in front of the door. I will be back just for the donut. Recommended!
