At a stop on my food tour https://www.yelp.com/biz/raphael-tours-e-events-roma?hrid=-_YBOAtJAWcK0fNSvNWmdw in Rome, we had the opportunity to do a tasting from one of the vendors at Campo de' Fiori. Included was this red pesto. I couldn't help myself and bought this jar of it. Yeah, I certainly overpaid and because it's bigger than 100 ml, it meant that I couldn't carry on my luggage at the end of the trip. (Which was my excuse to also purchase some balsamic vinegar and lemoncello later!)
I've been home for a bit and tonight decided to cook it up.
Recipe:
1. Cook pasta in salted water. Ideally, gemelli but I didn't have any. I chose this penne regate because it had ridges to better catch the sauce. A smooth spaghetti or linguine wouldn't work very well.
2. When al dente, drain the pasta saving about an ounce of water.
3. Mix the pesto with the saved water.
4. Toss the sauce with the pasta.
5. Serve and top with fresh parmesan cheese.
OMG, this was so tasty. It was better than when I had the tasting in Rome. So flavorful! I'd love to find this back here. They don't seem to ship to the USA and I don't see it on Amazon. I have some ideas so I'm on the lookout.
