He will buzz you in. The BEST is the pork based soup kimchi ramen (donkut?). The soup is just like the one I had in Japan and the "best" places in NYC and Toronto. I was curious as to what the local ramen would be like, so when I found this small restaurant run out of a dojo by a guy who had studied in Japan, I wanted to go! I went with a group of three people and we split an order of the classic gyoza and takoyaki to start. The gyoza was very interesting, almost like a seared ravioli, and not as traditional of a gyoza as I am used to. The takoyaki was very delicious, with the fresh seafood in the middle mingling very well with the freshly prepared batter and the toppings. I got a bowl of miso butter, and my friends tried the tan-tan men and curry ramen. I'd probably say that the broths across the board were relatively saltier than I'd like. The noodles the first time around were a tad overcooked, but the kae-dama was cooked al dente. It's funny, because I'd almost forgotten how non Sun Noodle ramen noodles tasted! I chatted with the chefs about my ramen adventures in the US, as well as my own attempts at cooking some tonkotsu, and it was overall a great experience. If you have a craving for some ramen and you're in Rome, this is the place to go.
