As huge fans of their Sta. Rosa branch, we had high expectations for this Michelin-recognized spot. Unfortunately, the logistics and service completely overshadowed the food. The location is tough. It is in the basement of an old, unappealing mall that strangely charges for basic, unstocked restrooms. Inside, the ambiance feels like a basic neighborhood canteen that was simply given a fresh coat of paint and some wall art. Seating is tightly packed; tables are built for four, so solo diners and couples should expect to share space. While they boast a massive menu compared to other Inasal spots, ordering was incredibly frustrating. Every non-chicken request required the waiter to check with the kitchen, and we were repeatedly told "no"--even though we saw the exact same dishes served to tables around us. The saving grace... the Chicken Inasal is excellent and very reasonably priced. However, efficiency is non-existent. A sign warns of a 30-to-45-minute wait, leaving a dining room full of people just staring at their phones while a massive queue builds outside. A simple fix, like taking orders from the queue in advance, would drastically improve table turnover and customer satisfaction. Great chicken, but the operational management is deeply disappointing.
