Eyval is an informal word meaning "right on" and right on is right. Eyval needs no introduction as it is consistently on the New York Times Top 100 Best Restaurants in NYC list. In 2026, it landed at spot 57. Being Middle Eastern, I've had plenty of Persian food in my life (it's truly some of my favorite). Chef Ali Saboor is doing an elevated and sophisticated take on the cuisine. If you're looking for the classics, you won't find them here but if you're looking for a culinary work of art, definitely set your alarm 3 weeks in advance to snag a reservation. We ordered 2 cocktails which were both fruit-forward, refreshing, and light. They didn't blow me away but they were pleasant to sip on. I was debating between the 2 breads and so glad we got both! The Komaj Bread has more of an earthiness to it from the turmeric and cumin while the Barbari Bread is more of the classic style. They were warm, fresh, soft, and so satisfying. The Mast o Musir complimented the bread so well and I would argue is a must with the bread. It's simple yet well-done. Think of a shallot-flavored labne. I also loved the turmeric oil which was very subtle but complex. The Citrus Date & Cabbage Salad was so beautifully presented. My favorite part was the warm dates but after a few bites, the salad grew on me more particularly the chili tahini dressing. At this point, I'm already satisfied but this meal got exponentially better from here! The Lamb Ribs are an absolute must order, exceeded my expectations, and had me audibly moaning with each bite. Each rib was so savory, succulent, and tender. They fall right off the bones, are very fatty (the only downside), and the barberries was a much welcomed contrast. I'm a big fan of barberries (zereshk) and wish they had a version of rice with this! I also loved the Kabob Koobideh which is a blend of wagyu beef & lamb brisket. It's juicy, well-seasoned, and surprisingly not too fatty. I absolutely loved their basmati rice and paired with the tomato butter, it was addicting beyond words. I wish this came with a second skewer or a chicken skewer to make this more of a "complete" dish for me. I wish they still had their saffron ice cream sandwich but because they didn't, we went with the Saffron Ice Cream which was floral, aromatic, and nutty. It's not sweet making this a good palate cleanser. The Persian Tea was warm and fragrant but for $5 a glass, I would skip it. You can get a whole tea pot full for that price elsewhere.
