When planning a trip to Italy for our recent honeymoon, I looked up classic Florentine dishes. One dish that seemed interesting is a classic street sandwich named Lampredetto. Gusta Trippa offers an amazing Lampredetto sandwich, the meat is specifically the 4th stomach of the cow.
The stomach is cooked in a red broth with herbs, and the result is very tender and rich tasting. They serve this meat on a simple soft bun that soaks up the broth from stomach.
