I can hardly express how happy I am to see Hope returning to the food scene in Gresham. Hope's Bakery was a larger operation, attempting to supply local coffee shops with pastries while also running a bakery/cafe operation herself.
There was a family tragedy which shook things up to say the least, and I feared we might lose Hope in our local food scene.
I heard through a friend (Brad at Legacy Coffee) that she had reopened and I went over immediately.
The cafe looks only slightly different. Freshened up a little, you might say. The cases are a little sparser because the bakery side of the property has been sold to another bakery (O The Bakery, q.v.) leaving a smaller menu, no loaf bread, and a more direct-retail environment.
The entire operation is now run from the cafe space. All cooking is done behind the counter and proving tubs abound in the early morning as they prepare that days baking.
Hope is cheerful and her recipes are spot on, even continuing the Hungarian Mushroom soup that disappeared from Gresham when the Truffle Hunter closed. Her gluten-free game cannot, I repeat CANNOT be beat (the woman-who-lets-me-live-with-her (thanks Mike) is gluten free and she nearly cried when the bakery closed) and I very much look forward to the eventual return of her sticky buns which are divine, the gluten free variety is almost indistinguishable from the normative ones.
Good soup, good baked goods, absolutely charming staff, and a willingness to lean into our community and bring something wonderful to us. read more
