I know I shouldn't be doing this but I just had Tamashii a couple of days ago in OKC and now I can't help but to compare everything to the gold standard. If this was the first time I've been to a ramen bar, then I would give Kazama Ramen Bar a 4/5.
So far, Kazama Ramen Bar is about the level as Ichitori Ramen in terms of the ramen, actually neck to neck, almost no difference between the two. I've tried the Tonkotsu ramen at both places. Broth tastes about the same, mildly creamy. The noodles of both places are a little hard, need a few minutes sitting to get softer. Pork bellies from both places are dry due to the high meat to fat composition. The best feature of both places happen to the the eggs in my personal opinion.
Service is good at both places. Not much difference to me at all as I am happy with the service. Ichitori Ramen is more spacious and busier, although this may be location dependent and the time I dined in.
The best feature of Kazama Ramen Bar for me is the Kazama jalapeño poppers which are stuffed jalapeño peppers with snow crab, masago, green onions and cream cheese drizzled with house made spicy mayo and eel sauce. The jalapeños are spicy which I love. I am serious they are spicy hot.
If I offend people for comparing different ramen bars, I apologize in advance. Like I said, I can't help it because the difference is just too much. Like I've previously stated, you don't know what ramen really is until you've tried Tamashii. Love that place! read more
