Stopped by on a Wednesday during lunch hours and their "Taquismo Special: Birria Ramen" caught my eye. I love seeing thoughtful fusions that chefs create, especially when they bring out the flavors from different cultures. I'd never seen something like before, so I figured I had to try. This dish was very satisfying to me, but it actually was more like a Taiwanese beef noodle soup (牛肉麵) than any ramen I've ever had--except with way better beef. It has that unassuming but complete heat, the rich fattiness in the broth, a chewy noodle with roasted peanuts and other garnishing that are all so reminiscent of Taiwan's style to me. I enjoyed this so much on a hot day, I can only imagine how popular it would be on cold days.
I would not only order this again but now my curiosity is piqued for all the other menu items on rotation by different chefs. Great multicultural, innovative concept! read more
