The August 2024 tasting menu was an elevated Texas style experience.
Owner Perapol invited his friend Chef Tedd Romero to present this month's tasting menu. Chef Tedd has been a well known staple in the Napa Valley for almost two decades. In 2016, Chef veered from pastries and dove full hearted into the realm of barbeque. Studying with some of Texas' best pit masters. Today chef and his wife Alesha run Sticky Business Barbeque in Napa, CA.
Quickly this tasting menu became a delicious Texas feast.
Pickle Back- the most devine juicy smoked prime brisket bite with a shot of pickle juice and a shot of Redneck Riviera Whiskey. Let's start this evening right.
Charred Romaine- romaine lettuce accompanied by pickled watermelon, blue cheese crumbles, balsamic reduction, and evilly sweet candied pecans.
Street corn - less mess and full of ingenuity. Fried polenta sticks, topped with smoked sriracha aioli, queso fresco, micro cilantro and tajin dust. Yes please.
Pork belly and peaches. No dainty dish here. More incredible flavors complimenting each other. Duroc pork belly, grilled fresh market peaches, chili crisps, creamy burrata and micro basil. A summer meal you could eat every night.
B I G beef rib- an understatement, I've seen softballs smaller that this smoked beef rib that just fell off the bone. It was so cozy on its pillow of fluffy potato purée and a drizzle of beef jus. This Texas sized portion dealt enough for two days of left overs.
Spice gurl- was the perfect ending to the evening. Spiced crumble with a light apricot sorbet and caramelized figs.
Each course had its own smokey flavor, and the meats were so juicy. Absolutely amazing.
Not just the meal, but a chance to meet and talk to the Chef throughout the evening. I would love to see him create a bbq version of beef Wellington. With his skills it would knock your boots off.
Perapol has consistently gone out of the "box" to create a very unique monthly tasting experience. Hence being the one restaurant I have probably reviewed the most. read more
