Located in Kakaako next to Aloha Beer Company on Queen Street, Ruby Violet is a little gem pop-up coffee bar! I got to chat with the owner who showed me the different powders he uses for the lattes. Full of flavor, low glycemic because it is made with palm sugar. Per his recommendation, I tried to the ube latte and got an espresso shot on the side. This is REAL ube taste! Not the bright purple flavored kind that you normally get. I will definitely come back to try the other flavors like beetroot cocoa and the seasonal match flavor.
