Food that Loves me Back
Once in a while, I seek out a meal that goes beyond my usual fare.
Today I found such a meal at the Coco Nut on Chambers in Eugene.
I ordered the Fajita & Hummus Burrito (see photo) and a Raw Chocolate Bar,
Mint w/cacao nibs
From the Menu: https://www.thecoconut.net/menu
red bell pepper, onion, guacamole, cashew "sour cream," romaine, chipotle hummus, red cabbage, pico de gallo in coconut pepper wrap w/side of mild salsa
It was busy. A smaller place gets crowded fast, nevertheless, the service was fast, polite, and professional.
The burrito's wrap is light and doesn't weigh heavily like some burritos, which are overwhelmed by their heavy bread tortillas, drowning out the contents. The ingredients satisfied my hunger without making me feel overly full. The food is creamy without being greasy. I want to try it with some spicy salsa. I appreciate food that is satisfying and doesn't leave me feeling heavy. The Coco Nut specializes in flavorful food that is light and savory, all made with choice ingredients that you can trust for their quality and healthiness by a chef who is clearly on a mission. It is expensive, but everything is nowadays, and the value is undeniable.expensive, but everything is nowadays, and the value is undeniable.
