First off, let it be said that Acqua e Farina is hands-down the best non-Chinese restaurant in Preston. The ingredients are obviously high quality and assembled with care.
That said, there are a few things keeping A & F from true greatness. First, the crust could stand a little more cooking--it lacks the slightly charred quality that often takes wood fired pizza to the next level. Second, the pizza itself could use a bit more sauce and cheese. My prosciutto pizza had heaps of meat, but the saltiness of the cured meat wasn't well balanced with the sweetness of the sauce or the richness of the cheese, leading to salt overload. On another occasion my margarita pizza didn't have quite as much flavor as I would like, mostly due to a too-thin coating of sauce.
On both occasions a rocket salad was ordered to accompany the pizza. The salad was very good, with a good ratio of rocket to Parmesan to pine nut and oil. I look forward to sampling their pasta options as well.
A&F is still very new. I am hopeful that they can elevate their game and bring top tier wood fired pizza to Preston. read more
