This is one of those temple-like places where you go to get the very best of one truly great thing, in this case Parmigiano reggiano. Reggiano is sometimes called "the king of cheese" and I agree.
The name of this place translates to "the king of the shape" - obviously a reference to the many wheels of reggiano stacked on the wall.
Get the three year - why not? When are you going to Bologna again, the heart of the land of so many DOP artisans?
A kilogram cost me like 22 Euro, less than 25 bucks. Would have been $80 for that much reggiano in the U.S. - if you can even get the three year. Get some old balsamic while you're in Bologna, goes great with the cheese.
