The owner, Steve, generously spent time with us explaining the virtues of each species of wood, and how each type cooks and pairs best with different foods and cooking methods. He was familiar with our pizza oven, and steered us to a different size wood that he thought would perform better in our oven. He was RIGHT ON. Not sure what has changed between now and the August 2016 review, but the wood that was delivered to me is not evenly sized, and some pieces are far too large for my fireplace.
