The owner explained how they get high quality potatoes and then cook them using a special process which takes many hours. Impressive for a little tent on the side of the road. There are people there all the time but there's never a long wait because they're just putting toppings on potatoes. Sometimes they close 30-60m early if they run out of potatoes because they can't just start new ones. You won't regret trying this out.
