It has an unusually soft, almost mushy consistency, and the meat-to-fat ratio also seems off. While cooking, I have had to drain excessive amounts of grease. The flavor is acceptable, but the texture is often mealy and unpleasant. I contacted the butcher to provide feedback. I was not seeking a replacement for the roughly 120 pounds of ground beef I received. I simply wanted acknowledgment of the issue and reassurance that steps would be taken to prevent it from happening again. Instead, I was told the texture was the result of the cow's genetics. I found that explanation difficult to accept, as texture issues of this nature are typically associated with processing and preparation. Rather than addressing the concern, the response appeared to shift responsibility away from the butcher and onto the rancher. What disappointed me most was not the product itself, but the handling of the concern. A sincere acknowledgment and a willingness to discuss the issue would have gone a long way. Unfortunately, based on both the product quality and the customer service response, I will not be making future purchases from Rickman's.
