This restaurant has come a long way. First, years ago, it was part of the lobby of a famous hotel called Le Bertin. The owner of the hotel and the restaurant was a man named Monsieur Bertin, a remarkable chef. He died. The restaurant and the hotel remained shuttered for many years. Now it's re-opened under the capable management of the Colombat family, Benjamin and Sandrine. Benjamin has 1 Michelin Star for his work at his first restaurant Côté Rue in Draguignan, Now he has moved on to be the chef at le Chateau de Berne in Lorgues. He bought Bertin a couple of years ago and has made it work. Sandrine is Ben's wife. She runs Le Bertin. Very well I might add. It's a big place, always busy with great food and service at reasonable prices. The only thing I don't like about Bertin is the new tables.
