You order at the stand make sure to add some tacos (dorados) to your order. You take it to the salsa area and slosh it with your favorite condiments like cueritos (pickled pork skin), mango salsa, pickled onions and array of heat salsas. Grab napkins and a fork. I had actually tried this thing before like a week before at some other place. So we came to this place that to everybody is the best ever in Leon. So a Guacamaya is a bolillo bun stuffed with pork rinds maybe with some slices of avocado and topped with a watery smashed tomato sauce(mexican style not to be confused withitalian) I know it sounds kinda wierd but you have to try it. every body loves pork rinds and bolillo buns. the place is famous but in my opinion that day my bun was to hard, the stuffing was not enough and they only put a little slice of avocado. the only good thing i believe is the sauce it has different levels of heat from "no heat to please tell my wife i loved her". it was pricey we had 2 of these and a couple of cokes and it was what we would normally be charged to eat tacos at night somewhere. its a good place i think but there are better places out there.
