We also learned how to make homemade/hand folded pasta that was then used with the Italian sausage as part of our 5 course feast. Toni provided a great overview of proper wine tasting while she and Eric walked through why each wine for each course was chosen to pair with each dish that they had prepared to allow each course build on the last until the crescendo of dessert with its appropriate wine.
