Recipes for the foam topping vary with this one from Feng Cha containing cream cheese blended with whole milk, condensed milk, heavy cream, brown sugar, and salt. You can get varying levels of sugar and I got the minimum of 25%. I also chose oolong over the standard green or black. The consistency of the topping is a cross between handmade whipped cream and the head on a Guinness. It's definitely a dessert tea and has a wonderful mouthfeel combined with a well thought out blend of flavors. Plus, the service from Lina and Colleen was first rate, the establishment is clean and tidy, and there's plenty of parking on side streets. Highly recommended!
