Boucherie Parisienne is a reliable chain butcher in the Paris Metro area.
They don't have a Boucherie Parisienne on every corner.
But they are available in many sections of the city.
You don't have to obsess too much on brand names when you are looking for a French butcher.
Most French butchers stock more or less the same products.
You will generally find:
1) Good cuts of beef, veal and lamb.
2) Boudins, Merguez and other standard sausages.
3) Chickens both normal and farmers'.
4) A set of pre-mades to take home including rillettes, terrines of various forms, roasted chickens, and some more elaborate cooked dishes.
5) A selection of dried sausages and prosciuttos.
Everything is wonderful in most French butcher shops.

There are specialty butchers if standard French won't do you.
Levallois-Perret has a large Jewish population, so the kosher butcher here gets a lot of action.
In North African neighborhoods, there will be halal butchers.
Both kosher and halal butchers are outstanding.
There are vegan "butchers" selling you the latest dubious soy concoction.
But Boucherie Parisienne is my go-to meat provider.
I have eaten all over the store - buying both meat and pre-mades.
