Not really hard or excessively chewy that your temples hurt after eating a few pieces. It was pretty salty, but all beef jerky is. My husband who likes gamey meats said it was a bit gamey. They were delicious and then we couldn't believe the low cost when we were told about it. We finally made the trip on our own. I also saw they have a hot table with a number of delicious Polish foods to choose from.
