Meeting Tracy O'Boyle over six years ago, I immediately saw her enthusiasm and passion for catering. At the time I was employed by Daveste′ Vineyards and recommended Catering by Tracy for special vineyard events. I saw firsthand that customers were satisfied and happy with Tracy's excellent cuisine and turnkey operation. In January 2016, my daughter became engaged and asked to have the wedding and reception at our home on Lake Norman on June 25th, 2016. I knew Catering by Tracy needed to be booked first thing, because we wanted Tracy O'Boyle, who has a long history in the food industry and catering expertise. Tracy came to our home and presented several menu selections and price ranges. The Low Country Boil, (Large shrimp, sausage, potatoes and corn) cooked on site and seasoned with Old Bay, was our first choice. We decided on Apple Wood Smoked Chicken with grilled veggies as a seafood alternative. Salad and grilled French bread were offered with both menu choices. Pass around appetizers to be served during the cocktail hour were Tomato Basil Mozzarella Skewers with a Balsamic Glaze, Fresh Fruit Kabobs and Mini Pimento Cheese Sandwiches. Tracy worked with me, my daughter and her fiancé over the next months as the big day drew near. She was always polite, professional, fair and a delight to work with. On the wedding day, Tracy and her staff arrived exactly as planned. They were looking good for the event as they were dressed in their logo apparel. The bartenders, chef, servers and of course Tracy went above and beyond the call of duty. The food was cooked to perfection and tasted delicious. As requested, Tracy's staff cleared the tables promptly, passed around our hand cleansing finger towels then cut and served the wedding cake. The food area was cleaned up, just as they found it and all trash was put in cans and stored. In a nutshell, Tracy O'Boyle and her staff were fantastic. We recently used Catering by Tracy for an important Church event. Our pastor was retiring after 35 years of faithful service. We found Tracy and decided to utilize her catering service. Tracy was very attentive to the special detail we desired and offered a number of ideas to help make this event a resounding success. She was extremely easy to work with and did a great job in helping us to prepare. The night of the event, she and her staff arrived in plenty of time to set up, all food was professionally prepared and set up for the serving line and every detail was considered. The presentation of the food line exceeded our expectations and the food quality was even better. Tracy also accommodated some last minute increases to help assure we had enough food for the event. Tracy and her staff were excellent to work with; they worked quickly and efficiently and helped address any challenges that came up. They were very friendly and it was easy to tell they were just as invested in the evening as many of us who helped plan it were. I could not think of one detail that was missed or not planned for; her team did an awesome job. I would certainly recommend her catering services to anyone needing food service. She and her team didn't disappoint and they certainly added to the success of the event. My son and his fiancee had decided on a small family wedding at the bride's parents home. I volunteered to arrange for the catering, even though I was unfamiliar with the area since I live in another state. I called several caterers only to find they would not accommodate such a small number. However, when I contacted Tracy, she was able to suggest a menu that would work for our small affair. In addition, we had some food allergies and vegetarians among the guests. Tracy took all of this in stride. On the day of the wedding, Tracy and her assistant showed up on time and quickly got to work setting up a superb wedding feast. The food, salmon and chicken, was delicious and the service, excellent. They made sure our glasses were filled and cleared away dishes, trash etc so we did not have to leave our tables. After dinner, Tracy and her assistant left the kitchen spotless and packaged up the leftovers for us to enjoy the next day. I recently used Tracy for my husbands 70 birthday weekend on the lake. From our first phone conversation, I was impressed with her ability to put together a menu that would suit 12 grandchildren, ages 1-16, yummy chicken tenders, and delicious hot dogs for a fun lunch on Saturday, along with a delicious chicken salad ,a few vegetarian dishes , for the no- meat eaters, and a delicious cobbler, my husbands favorite, for his birthday dinner. Every thing for the weekend was prepared, and delivered , and she helped set up the frig as to accomodate all the pans in an orderly manner. She gave me directions on reheating, and when she left after giving me a delicious plate of brownies , and chatting with some of the children, I felt relaxed in knowing I had the food for the enrtire weekend to serve 11 adults, and those 12 grands! Tracy did an amazing job on our event from the very beginning. She immediately responded to my inquiry when I first reached out to her about possibly catering our event. And then she remained in touch throughout the process and suggested some fun and creative ideas to make my husband's 75th birthday party very special and festive. I met Tracy 8 years ago when my friends came down to vacation here on Lake Norman...there were 32 of them with all of their kids! Instead of trying to go out to dinner with such a large group, they hired Tracy to cook their dinners! It was amazing! She came, set up, served them, cleaned up & boxed up all the leftovers!! We kept in contact & became friends & I use her & refer her to anyone I know! She is now doing home cooked meals to pick up out of her storefront & it is simply delicious!! This past week I picked up salad & lasagne, meatloaf, spinach & smashed potatoes for 2 of my meals! Everything was awesome & I honestly couldn't tell you what I loved more!! The portions are large & the prices are so reasonable! I am beyond excited for her to do my daughter's bridal shower next month! Tracy and her staff catered a party to celebrate our recent marraige. We planned on 100 attendees. With our first contact with Tracy assured us that we were in good hands. She was amazingly easy to work with. Tracy provided insight into menu planning, site setup, etc. Our event was to be outdoors. She coordinated rental of a large tent, tables, chairs, and linens. The staff was very competent and worked together like a well-oiled machine. They were efficient and knowledgeable. When the food was to be served, Tracy and her staff were attentive and very friendly and engaging. Our menu consisted of chicken, pulled pork, baked beans, red potatoes, and a selection of fresh fruits. The food was AMAZING! Everything was cooked perfectly and was so flavorful. I had Tracy cater our sons Wedding Rehearsal dinner. WOW.. She and I had numerous phone and email conversations prior to finalizing our menu, this was our 1st rehearsal dinner and Tracy was outstanding on making recommendations that ended up being perfect. We asked for a Gluten free help and Tracy did everything that my wife and I asked for. We decided on the Smoked chicken and Baby back ribs (oh my, melt in your mouth tender), red garlic potatoes and southern green beans.... Washed down with perfectly sweet tea and lemonade... We wanted the dinner to be casual and fun, and Tracy and her staff did a fantastic job of making us look good...... The guests commented all night on how good the food was and the service that Tracy and her staff provided. Tracy and her two assistants catered an outdoor summer evening party for about 100 of our guest. It was hot, humid, and guest numbers kept changing right up to last minute. None of that flustered her. Tracy and her crew set up quickly. The presentation was beautiful and the food was delicious. In addition, Tracy looked after things I didn't have time to get to or completely forgot. She put labels on the beverage coolers, opened bottles of wine with her cork screw (mine was somewhere still in my kitchen), and had her assistant buy extra veggies to take care of last minute guests that included an 8-member band I'd forgotten needed food. They bagged the leftovers and helped clean the guest tables of plates. Our guests raved about the food and friendly, cheerful, professional crew. My office used Tracy for an evening meeting where dinner would be served. I called her up with no idea of what I wanted. Tracy was very patient, polite, professional, and helpful! She listened while I stammered and talked to myself on the phone . Through all of that, she was able to put together the perfect menu for us!! Tracy and her assistant arrived on time!! The two of them set up, served, packed away the leftovers, and cleaned up; all for a GREAT PRICE!!!!!! They looked and behaved professionally. We will definitely use her again and again and again!! If I could give Tracy's Catering a million stars, I would!! I highly highly recommend Tracy and her crew. We booked Tracy and her team based solely on reading reviews, and we were absolutely blow away by how amazing the food was!!! Not having tasted the food prior to our wedding, we were a touch nervous. But the food was absolutely DELICIOUS. We did the chicken and bbq sliders plate with potato salad and green bean casserole, and did the baked ziti for the vegetarian guests. Our guests were overwhelmingly southern, and the overall consensus was that this was the best green bean casserole any of us had ever had. All of the other food was also so good. I contacted Tracy to cater a business lunch for 40 people. She helped guide me through the large menu of choices and pointed out some items that had worked well in the past based on the specifics of our event. Communication was easy and professional - phone, email and text. The lunch was served buffet style (at our request) and was set up very nicely. Tracy and her staff served everyone and took time to explain each dish as they went through the line. It was evident that they had done this many times and had the process down to a science, all while maintaining a personable, friendly environment. It was very impressive. We recently, along with four other couples, hosted a "HAPPILY EVER AFTER PARTY" for a really sweet couple who will be married next month. The party was held at our home on Lake Norman. Tracy was amazing to work with from beginning to end. I found her to always respond very quickly and she is a very busy lady!!! Shae and Brandy did an awesome job bartending, serving, and all of the many tasks that go along with a nice party. Their attitudes were fabulous from the time they showed up at our door until the end. The food was beyond wonderful! Not only did it taste great but presentation was superb too! I have used Catering by Tracy for several large business lunches over the last few months. The signature grilled BBQ chicken is fantastic and paired with the macaroni and cheese and southern green beans, a top notch choice! We've also had box lunches, with a choice of chicken salad wraps and BBQ wraps. The chicken salad had just the right touch of spice, plus grapes and spring mix for a nice lighter lunch option. BBQ wraps included a bit of red slaw which was also delicious. Tracy is very responsive and delivers on time, brings all the needed serving utensils and sets a beautiful table. WE LOVE TRACY! We hosted a big event on a yacht on Lake Norman for a charitable cause and not only did Tracy immediately respond, offering her services (donated) but she took care of everything. I can't say enough great things about her and her team. The food was AMAZING, delicious, they served everyone. My Daughters Baby Shower March 23 2019 Tracy and her Team were excellent!! The ladies that serviced our Baby Shower were perfect! From the initial prep for serving, to supporting our guests needs, to the final clean up. The food quality was beyond excellent. Our guests raved about the "high end cuisine" that Tracy prepared! I recently had Tracy cater my our wedding party of about 115 guests at a outdoor wine vineyard on Oct 4th.Tracy was extremely helpful in planning the menu for the party. She would argue with me on quantities so I did not order more than I needed. Trust her, she was spot on. The food was great, especially the mushrooms and smoked sausage appetizers. We have not stopped getting compliments on the food. We did brisket and smoked chicken as the entrée. They were very professional, clean, efficient, and friendly. We used Tracy for a company picnic family event and the food was excellent! They were on time, very friendly and attentive to all of our needs. Lynn (a member of Tracy's team) went around and cleared the plates from the tables and cleaned everything up. Tracy followed up with me on Monday after the Saturday event. We had an minor issue with rolls, but it was taken care of that day. She came by our office and brought mini red velvet cakes that she is now carrying for us to try. Scrumptious!!
