Also, the edges end up being very raised and puffy, way more than average. The pizza here is seriously delicious. And they also serve another equally delicious pizza-related product: the panuozzo, which is basically a sandwich that uses pizza dough instead of bread. Two men rolled out the dough and added the toppings. A third was the master of the pizza peel (or paddle) and the oven. The dough is incredibly light and elastic. Generous pinches of flour are dusted on the working surface and the pizza peel to keep things from sticking. The toppings are fresh. The cheese is usually a creamy fior di latte rather than the heavier mozzarella. The wood fired oven is very hot with pizzas baking in only a few minutes. Some toppings like fresh basil are added after cooking. All pizzas are drizzled with olive oil before being served. The end result is an incredible crust and a more delicate taste than any pizza I've had before. Prices range from €5-€10, with most around €8.
