His 2nd chef couldn't make it last minute but Dylan made sure this didn't affect our experience by shopping for half of his ingredients and swinging by to check out our kitchen the day before so that he could maximize his time the day of. She curated a Caribbean inspired menu that was so thoughtful. We began with papas rellenas, perfectly crisped potato croquettes stuffed with beautifully seasoned curried lamb. They were so flavorful. Next was a vibrant Caribbean salad with leafy greens, dried tropical fruit, prawns, and a delicious honey-lime dressing. It was fresh, bright, and perfectly balanced. For the main course, she served jerk cornish hens with rice & peas and mixed vegetables. The flavors were incredible!!!
