It was located so close to every winery on the Left Bank, so extremely worth it for location purposes alone. We could have saved by staying in Bordeaux for all 3 nights of our wine tasting excursion, but honestly it was worth not having to drive 1 hour to Left Bank, wine taste all day, and drive another 1 hour back. You want to enjoy your time in Paulliac!! The hotel itself was so charming though! There were several living room areas that you could relax in, a swimming pool, and even a small vineyard area with tables and service should you want something small to eat. It was extremely relaxing, and although there really is nothing to do on the Left Bank except wine tasting, it would have been nice to stay another day to enjoy this beautiful and charming hotel. Our room was very modern and cute. The swimming pool had plenty of lounging chairs - wish we had time to retreat here, but we simply didn't have the time. The service was so amazingly sweet and genuine here!!! The front desk attendant was so accommodating for us. We told her that we had an early train in Bordeaux at 7:45am, and she gave us helpful information on suggesting when to leave. Also, because of our early check out time, she offered to have breakfast and coffee ready take-away for us! When we checked out at 6am the next morning, we could smell the coffee when we walked in the hallway down to the lobby, and the breakfast pastries were ready prepared for us in a box, and the box was WARM and the croissants were delicious!!!! Wow. I wish we could have stayed a little longer to enjoy the real breakfast. Take me back!!!!!!

The nice pool and the well-equiped gym (opened for one customer at a time during COVID) were good additions to an otherwise flawless stay. We booked online with a travel site and the reservation process couldn't have been easier. The rooms aren't anything fancy but well appointed and clean. We had a nicely-sized closet, mini bar, two desks, a king bed and a twin for extra room. But the bathroom.... my goodness THAT SHOWER. I like my shower time people, but this shower... it was possibly the best shower I've ever been in. Not only was it large and beautiful, but the huge rainfall shower head pushed out water at just the right pressure and temperature. Seriously guys, I could have spent over an hour in there, pruney hands and all. The restaurant downstairs is a life-saver as the closest restaurant is a bit of a drive, especially if you're new to the area. We ate downstairs for breakfast and dinner both nights. Lunch is only served on the weekends. Although the menu is small and doesn't change, the selection is tasty and very French. They also offer a nice wine list that features local Médoc wineries. Breakfast isn't included with the room price, but again... worth it. Front desk management speaks English, but the sole restaurant waiter does not, so be prepared to speak a bit of French. The only hang-up we had with the place is that the room got very warm and we couldn't cool down because of the hot temperatures outside. Air conditioning would have been a nice bonus. The views are spectacular, the location is remote and serene and the Chåteau is lovely. Definitely would recommend if you're looking for a place to stay with a slower pace of life.

Note: Tours are by appointment only. Our guide spoke excellent English and effectively provided insight on Lafite Rothschild's unique terroir (a term that was discussed at every château we visited) and described in depth its winemaking process. While the winemaking operations and facilities were pretty comparable with other minor châteaux, its cavernous cellar was definitely an impressive sight to behold. The best part of the tour was its culmination, the tasting. We were offered a generous pour of the 2001 Lafite Rothshchild. To which I could only say, "Yes, please."

The name "Lafite" derives from the meaning "small hill" and the small hill is located in the rear of the beautiful château. The different grape varietals are planted according to the condition of the soil: estates with heavy soils plant more Merlot and estates with gravelly, porous soils plant more Cabernet Sauvignon. The Ch.Lafite vineyard is cultivated with old vines of 70% Cabernet Sauvignon, 20% Merlot and 5% is Petit Verdot and Cabernet Franc. In Pauillac, Cabernet Sauvignon is king and the varietal gives the specificity and character to Pauillac wines. Ch.Lafite utilises 29 wooden vats, 20 stainless steel vats and 18 little vats. Typically, pumping over is twice per day for ~17 days and there are 20 days of maceration. Wines are matured 18 months in new French oak barrels: 7 months in a natural cellar and 11 months in the second-year chai, built under the supervision of architect Ricardo Bofill. The circular vault holds 2,200 barrels and is supported by 16 columns. The circular design is functional since racking, bottling and cleaning can be done with greater efficiency than a traditional, linear designed chai. As has been the tradition at Ch.Lafite, 100% of the Domaine's cooperage is done in-house in Pauillac. Ch.Lafite employs 6 full-time coopers to produce 2,000 barrels per year. This is adequate to supply Ch.Lafite and all the other estate-owned properties with new French oak barrels each year. The French oak is selected from the Allier and Nivernais forests, then left to dry in the open air for two years at Ch.Lafite before being crafted. Traditional racking is 5-6 weeks. 8,000 organic egg whites are used for fining. When asked why organic eggs were used, our host explained that it was for stability reasons in the fining process as opposed to any environmental concerns. Annual production is between 15,000 and 25,000 cases (or 180,000 and 300,000 bottles). At the end of our visit, we tasted the 1995 Château Lafite - which was superb.
