For lunches during the rides they usually take us to local farmsteads or small restaurants in the middle of nowhere that unless you knew in advance you would not find them. Usually for lunch you would get multiple courses including local appetizers, pasta, and the local desert all of which were fantastic. Our guide took us all over the region, not just staying in the Finale Ligure region depending on the trail conditions and the overall skill levels of the group. Some rides were way up in the mountains and some we rode on costal mountains so we could see the ocean and villages below us as we dropped down. AND Every room has either a steam bath or a sauna. Yep...it's pure luxury. The coolest part is that four of the rooms are old Victorian still style and the other five are modern. This is because a portion of the property is historical and then they built a modern wing- somehow it all works beautifully. While I didn't actually sleep here, I know all of this because I got a personal tour with the GM, Roberto. I was considering renting out the Palas for my wedding and we spent a few hours on the property. We got to see the rooms, the wine cellar, the tasting room and then we enjoyed a spectacular lunch on the terrace. The menu is elegant yet traditional Piemontese and the service is impeccable and first class, but unpretentious. And of course, the wine. You don't have to be a guest here to tour the vineyard and setup a tasting. They have a phenomenal tasting cellar....it's gorgeous and modern and elegant. Michele Chiarlo is the winemaker and owner of the vineyards and hotel. One of the top producers in the region. Wines are gorgeous. The cellar houses something like 50,000 bottles in addition to other top wines of the Langhe. This place is a dream and I will absolutely be back for another meal and definitely an overnight stay.

The quaint neighborhood in the hills, the cozy kitchen and the warmth of our host could best be described as stepping into "Nonna's kitchen". Using all fresh, local ingredients we made: - Hazelnut "Kiss cookies" - Veggie flan - prepped and slow cooked beef with veggies in wine - Chocolate stuffed peaches - ate a variety of seasonal cheeses and honey - and made pasta from scratch (meat stuffed raviolis). Everything was paired with delicious wines which we sipped while learning the local history, including the origins of Nutella, Fiat and Eataly, as well as the farming community that shaped the culture of the region. We at and drank to our hearts desire before saying our goodbye with full stomachs and a goodie bag for later. For our wine portion of the tour, Sara drove us to meet a young, local winemaker named Luca. Luca's enthusiasm for sustainable growing and using "smart techniques" to make his wine brought an unexpected but delightful new-age wine-making vibe to his whole operation. "We have a brain, we have science, we use it." And all the latest advancements in "cork technology"... who knew?... Luca did.
