When I attended a cocktail event with Clear Ice & Bitters, I expected the usual: name your drink, the bartender makes it, and that's that. Not at all what I experienced here. The woman who owns the business and is the mixer will ask what you feel like drinking in a general way, but if you name a specific cocktail, she'll ask why and what are you looking for by way of taste: tart? sweet? brown spirit? clear spirit? and so on. She then proceeds to mix the most amazing cocktails I've ever experienced. She'll also talk about particular spirits, their use and history. She has clearly read a lot to go along with what must be an acute sense of taste, knowing what mixes well with what. Ask her, for example, for a Prohibition era cocktail with a particular spirit and you'll get a drinkable history lesson in a glass! In addition to a couple dozen bitters, she had an array of different beautiful glasses, the glass matching the cocktail. I've never heard of anything like the Clear Ice & Bitters experience.
