They are made by the owner Tommaso himself who has many years in crafting unique flavors in artisanal gelato making, no artificial flavor here. My favorite is Licorice and salty and sweet Pistachio. Sooo good. Tommaso was so kind to me and my friend to show his laboratorio in the back of his shop. I told him I will work for free when I am in Lucca on vacation Lol ! The bases are different mixtures of milk depending on the flavors. If you're lucky, you might even get a tour of the workshop in the back. The nero assoluto is stunning, great combined with some of the fruit flavors. Easy to find if you take the northern of the two entrances to the piazza off Via Fillungo, then go thru the tunnel, and turn left...it's right there. Not a fancy place, but really the best in town.
