The first burger I tried was made from kangaroo, and it was deliciously gamey without being overpowering. The burger was topped with bacon, melon, liquorice powder, and salsa sour cream, lime, honey, and mint. The sweetness of the honey paired with the acid of the lime and the cool melon was a perfect accompaniment to the hint of liquorice powder. Next, I indulged in the deer burger, a lean ground meat topped with porcini, a red wine reduction, mayonnaise with basil, chestnuts, and edamer.
