    Work had an event here for team building. Definitely is really fun compared to the traditional…read moredinner. So we were split into groups and we are each in charge of a dish or a course. So I did the Tom Yum Soup. Instructions were laid out in front of us. We had ingredients already or almost ready for us to start cooking. All we need to do is just to chop up the ingredients. We also had a theme. So we had the Vietnam dishes. I was in charge of making the Tom Yum Soup. It came out delicious. I really liked it. The other dishes were delicious too. Our instructor was Ching and she guided us in every step. Constantly watching how we cook. We had a great time. Everything went well. I also found out that every Friday they have couple's night cooking and Saturday they have classes for kids. At the end, I have to say it was fun. If you bring your own wine its cheaper but they have to pour the alcohol for you. Great team building event.

Got more than I was originally going for because they had other spices I had been looking for at their location. The store has a great collection of cookbooks, spices, kitchen equipment, specialty foods and equipment and lots to choose from from various nationalities. It is sometimes busy in there but line ups are generally not long. I inquired about French cooking classes and online ordering. They were kind enough to direct me to another spice supplier for items they did not carry which I appreciated very much. Definitely will be doing a lot more business with them,

They are first class and very professional…read more I first got introduced to their school when I went to listen to an evening presentation by THIERRY MERET -- CHEF DE CUISINE and MARNIE FUDGE -- PASTRY CHEF regarding their cooking classes overseas in France. This was pre covid and I still plan to go when they restart the overseas programs. At the presentation we sampled wine, appetizers and dessert. Beautifully pared and delicious. They made it so interesting and exciting I decided to take some of their classes in January, 2021. I signed up for 7 classes - Knife Skills, Cooking 101 (4 Classes), Stocks & Sauces and Made In France. My two favourite types of cooking are French and Asian. Needless to say I am very excited! Their in person classes are always small 10-12 people maximum so you get a lot of personal attention. Their cooking class area is so capturing the atmosphere of working in a professional cooking environment. They make it so educational, interesting, fun and motivational. Can't wait to get started! And if what I've seen at Cuisine et Chateau is held at any standard of quality and excellence, then the food scene of YYC is very much alive and well. Hidden away in Kensington deep in a building shared with a tanning salon and a cafe, the Cuisine et Chateau awaits all comers who want to learn beyond the normal menus. I have to admit, it's a nice cozy place that just exudes the charm of a parisian kitchen, complete with brick walls and clean steel. Chef Thierry Meret of Le P'tite Table and La Chaumiere holds court here with Pastry Chef Marnie Fudge. Combined, the two bring a well rounded excellence and education to the students, and I can see why. At this particular event I was attending, I was given a taste of an excellent quinoa salad with grilled shrimp, replete with lemon tones and flavours. Matched with the paired wines, the dish was simply refreshing, bright and well, yummy. Needless to say, I did enjoy it immensely. It's a great introduction to the food, and an especially good indicator. A particularly nice touch is how they've made the lessons specialized for the time, style, and interests. Want to learn how to develop knife skills? They got that. How about how to make a great french of italian dish in 40 min during your lunch break? There's that.     If you have the chance to go to the Culinary Campus event during Big Taste, it is truly worth it…read more At $85/ticket, that put my expectations fairly high and I was not disappointed. Doors open at 7pm, and when you enter you are given wine glass. There are stations throughout the entire kitchen, and the chefs & culinary students are preparing each dish right in front of you. You're welcome to ask any questions about how the food is prepared. The dishes for the 2016 Big Taste event included rack of lamb, sushi, flatbread, shrimp & grits, wings & fried vegetables, lobster bisque, crab cakes, rabbit, duck confit pirogies, and ginger beef. Every singly one of these dishes was amazing. For dessert, there was a selection of chocolate mousse, creme brûlée, panna cotta, tiramisu, and banana bread pudding. I tried it all, and the dessert was a surprising let-down. The dark-chocolate mousse was hard, the panna cotta was soupy and under cooked, and the banana bread pudding was much more mushy than any bread pudding I've had. The milk chocolate mousse and creme brûlée were enjoyable. I hope the desserts are improved for next year. There were wine stations throughout the kitchen as well, with wine from several BC wineries. I think there were 6 stations, and each had a white and a red wine, and you could drink as much as your heart contents. Overall, this is a fantastic event, with amazing food. $85 is pricey, however it's such a unique experience, and you can eat & drink all you want. Definitely worth it!

    Started this post back in December and just completing it now…read more.. Went here for a work/staff Xmas party and the experience was mixed. Our group came in to the commercial kitchen in the culinary campus, and the activity was to make our own dinner together. We chose a Japanese style. I have to say, it was really fun and a great variation to the typical staff Xmas party, great way to get to know your coworkers better. If it weren't for this, I'd probably give a 1 star. The bad part was the instructor. While he seemed to have decent culinary knowledge, he was quite overbearing, almost acting like he was the head chef of a large restaurant and at times spoke to us the way he might to a line cook on a busy night. I do not believe that was part of the intended experience as it was odd and unwelcome. Some of the food was fine, but the proteins, particularly the flank steak (done basically tataki style) was waaaay too salty (the instructor dressed it) and also far too many birds eye chilies making it almost inedible. Overall, the food was not great, and I don't think it was because of our staff putting it together.

    If I could rate this store a -5 stars I would. UNORGANISED and to top it off just plain RUDE RUDE…read moreRUDE. I presently work with an organization that does cultural events for youth in the city. One of my roles is to highlight youth in capacities of the arts and so therefore I am to oversee a huge art show at the Eau Claire market. Our organization is fairly high profile, we partner with the Glenbow Museum, the Public library and the Calgary Transit just to name a few. Our website gets 16,000 hits yearly. I needed around 30 art eisels and wanted to commission a carpenter to build them for me but I cancelled that contract when i found out that I could rent them at Swinton's for 6 dollars an eisel a day. Great deal So I called and booked 30 of them, and even called back two weeks later to confirm. The girl reassured me everything was fine twice,so I was calm about this event.. well .... until.... just a couple of weeks ago when I get a call from another staff member from the store and am told that someone had double booked me. Basically the eisels were not available and they had no idea who had taken my call and who had booked me when it was plain to see in thier calender that the eisels were already spoken for. I said how can a person reassure me twice about a date and a number on two totally different separate occasions and how can you not know which employee did this? A mystery still to this day and the irony is they dont have many employees. Go figure? This employee was very nice and was apologetic and he said he had at least 15 left and that the owner would be willing to cover the difference if I ordered from another store and kindly gave me two contacts. These contacts didn't pan so I told this employee that I would want what he had left and he suggested coming in to see other eisels they had that may compensate for the other ones. So I did today. The owner was not there but the co-owner his wife Donna was and she had no idea what I was talking about and yet again according to her calender I was not booked once again for the 15 eisels for that day. Again not only had they double booked me with the first request they had now overlooked me for the 15. I thought its okay people make mistakes but Donna's tone was so rude and bascially if she didnt know about it then obviously it didnt happen. We finally got her husband on the phone and low and behold he confirmed the negotiation but he was not advised by the second employee about the 15 eisels. At this point I am incredibly upset and I now only have weeks for my upcoming exposition. Donna says to me well "I have 15 do you want them or not?" in the most aggressive tone. I was so taken aback at her snappy tone so I then said, "listen your employees have made the mistake of double booking me and again I see I was overlooked yet a third time. I am irritated with all this , are you not going to help me your client? I also add I dont appreciate your tone right now and you are being incredibly rude". This does not even phase her with more zest she beligerantly carries on and answers " I have 15 take it or leave it" I am so in shock at the whole situation and this response and have never been treated so rudelyby a business ... but yet I say yes I will take them because the kids in the show need them and ask if she could please email me the two other options once again so that I can perhaps retry to find the other 15. It is now 7 hours after this request and I have heard nothing from her. Suprise suprise.... Tomorrow I will cancel the whole order simply out of principal. The staff obviously doesnt communicate to thier employers the follow ups, nor do they admit when they have made mistakes. The owner was trying to remedy this situation but his wife certainly needs to take a customer service seminar and perhaps deal with the public less. I still cant believe that this woman who is the owner of her store would treat a client in this way, doesnt she want business? Shouldn't she make ammends for the mistakes of her staff in a professional way? It still blows me away. I have reviewed over 700 businesses in this city and I have never been treated in such an ill mannered way. My board was not at all impressed with this store and we will never do business with them again plus she really picked the wrong person to lay her power trip on, the arts community certainly is going to hear about this...and needless to say so will the yelp community. So a big minus 5 stars for this woman and her non personal customer style and service. This yelper's favorite art supply store still stands, Mona Lisa's art supplies; educated staff, superb service and very nice owners... and why shouldn't you have friendly experiences and service... THIS is the norm.
