First we went to the local market and learned about and sampled local foods and produce like huitlacoche. After heading back to the house we got started on a totally immersive cooking experience, we made mole which makes light work when you have many hands to roast, blend, cook and prep. We also make fried plantains, Mexican rice and some little quesadillas with tortillas we made, served with a local cervesa and mezcal, it was delicious. My brother was unfortunately allergic to a few things in the mole which we totally forgot to mention and they were so nice as to prepare some chicken tinga for him. I love the fact that we made a full three course meal in under three hours including a delicious dessert. In order to do that, the instructors really had to know what they were doing. Prepping the ingredients and knowing exactly how to cook each one in order to make the sauces and the flavors perfect. I would recommend this experience to anyone who would like to know more about Mexican cooking from a professional. The kitchen is a professional one and has plenty of room for large or small groups. My wife and I sat at the counter and talked with Alexandra and Coca as they prepare the meal. We made tortilla soup with it at least seven different accompaniments. That was followed by Cochanita Pibil which was so flavorful and spicy along with a topping of marinated onions served on a sopé. Finally a delicious Mexican chocolate lava cake that was sweet and had all the flavors of cinnamon and other ingredients you find a typical Mexican chocolate. We even toasted the success of this meal and our time together with a shot of mezcal. I wish them the best of luck and can recommend this to anyone who would like to spend a few hours with some lovely people learning how to cook a delicious Mexican meal.
