They give excuses like "we can't give you a breakdown of the cost" or giving you an ultimatum to decide or find someone else. They then become aggressive when you ask them basic questions and lose their cool. So glad I figured this out one month before the event so I can find new and professional caterers to go with. Trust me on this: don't waste your time. Craaaaazy overpriced and very unprofessional
